Every single time I bake banana bread, I wind up using a new recipe. This time, I only had two bananas, so I added pumpkin in lieu of a third. From there, I made it up as I went along…brown sugar, walnuts and even espresso made it into the batter. The only thing missing was chocolate chips — otherwise, this recipe is definitely a keeper!
- 2 large ripe bananas, mashed
- 1/3 cup pumpkin
- 1/3 cup melted butter
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 egg, beaten
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 shot espresso (optional)
- pinch of salt
- 1 1/4 cups flour
- 1/2 cup chopped walnuts
Preheat oven to 350 degrees. Simply add all the ingredients in the order listed, mix and pour into a loaf pan. Bake for 1 hour and ta da! Delicious, moist (yup, I went there) banana bread that’s worth repeating.

I love recipes like this. They are so fun because I can’t ever imagine how it will taste good because the ingredients can be sort of random but then the bread is wonderful!!! Ahh.

My grandma used to make the best banana bread – when I finally got the recipe from her she had TWO CUPS of oil in the batter – no wonder it was so good! Hope you had a great weekend!

Espresso AND banana bread? I am alllll over that. I bet a smidge of cinnamon would be incredible too. Thanks so much for this recipe
