I can’t believe I leave tonight for my four day weekend! I’m so excited! Monday morning it felt weird getting back to the grind. I was tired and cranky and even my Tupperware of glorious messy yogurt couldn’t cheer me up.

After a somewhat stinky morning, I dug into a bowl of “leftovers.” Doesn’t look familiar? When I made my omelet Sunday night, I cooked extra eggplant, mushrooms and onions and put them to the side.  I also made a serving of pasta with my little 1/4 cup.  Plus the addition of an Amy’s veggie burger nuked at the office and voila! “Leftovers.” It was actually really good!

I also brought some mixed veggies which worked great as an afternoon snack.

After a somewhat long and uneventful day, I headed home to eat an early dinner before meeting Courtney at the movies! Not in the mood for anything in particular, I started with 1/2 cup of salted edamame.

And finished off with a little dessert — ice cream! My bowl actually was this size this time :)

After dinner, Courtney and I met at the Grove to see My Sister’s Keeper. Thank goodness I brought us some tissues because I cried like a baby throughout the movie. I think my contacts were crusty with salt when we left. Gross, but true. Courtsie had never read the book before so I got to tell her about the real ending.  We both agreed that the screenplay probably worked better in this case because the book’s ending probably would have felt like WTF since they can only set up the plot so much in the limited amount of time!

After the movies, we chilled outside on the fountain and talked all about Court’s amazing trip to Italy, boys, acting, moving to Santa Monica, summer plans, and boys again.  It was so great catching up! My dinner/dessert left me pretty full the rest of the night, although I did snack on a few pieces of fresh pineapple when I got home.

Tuesday morning was yogurt. Again. My fun toppings are dwindling down but I don’t want to buy any more right before going out of town!

Around 11 AM I snacked on some more fruit. I’ve never bought a whole pineapple before — it tastes so fresh!

Since work was dragging, Julia suggested treating myself to something special to make the day more exciting. As soon as she said that, Poquito Mas came to mind! I got the usual Nature’s Grill Burrito with eggplant, black beans, zucchini, peppers, and onions — sans cheese or sour cream.  You don’t need it, I swear! I had these chips (plus another few handfuls) on the side. Then I was a good girl and gave the rest away to my fellow co-workers who were eyeing my meal with very jealous stares.

I finished off the day pretty strong and headed home.  I wanted to go for a run but just REALLY wasn’t in the mood. I convinced myself using the old “you won’t regret it” mentality and hit the streets.  I cut the run a little short (maybe 2.5 miles this time?) because every single step was torture. My calves are totally killing me today too. It’s crazy how some days it can feel so amazing and empowering to get outside and exercise and others it just drags! You know?

I got home feeling hungry but not quite ready to sit down to dinner. I hate eating before 7 PM if I can avoid it because I stay up so late and then there are too many hours between dinner and bedtime. Ding! Smoothie time! I worked at a Smoothie King in high school and pretty much considered myself the queen of smoothies. I even brought a blender to college so I could make them at a moment’s notice (everyone eyed me jealously that my mom let me bring a blender to make mixed drinks. Um, no, this baby is for my refreshing pineapple banana protein shakes people!!).  So I used half this 100 calorie protein drink, 1/2 banana and a whole lot of ice to make this pretty, frosty glass of deliciousness!

This smoothie turned out to be the PERFECT thing to hold me over until a later, 9 PM dinner, which means I had plenty of time to shower, clean, blog and do some errands before eating. Dinner was more pure randomness and an attempt to eat a lot of veggies.  I cooked some edamame and chicken but needed to bulk up the dish.  I ended up tossing eggplant, onions, red cabbage, pineapple salsa and chile paste into a pan and cooking it all up together til everything was warm and tender.  This was one of those meals where I had NO clue how it would all taste but I was v. happy with the results! Normally I would make some grains/carbs on the side but all the veggies & protein & spice left me stuffed!

Today I skipped the yogurt and had a slice of 9 grain Newsroom bread topped with Better N’ Peanut Butter and some cherry jelly.

This tasted really good but made me feel immediately sick to my stomach which was weird. Luckily the feeling went away in an hour or so and I was good to go! I had a snack around noon — just some of the delicious pineapple.

I took a little break to meet up with India for lunch.  She’s been filming in North Carolina and I haven’t seen her sweet face in weeks!! We hit up Century City’s awesome food court and I got my regular mayo-free tuna salad from Coral Tree. Repeat photo, original taste!

After lunch I was crazy busy trying to finish all my work for Thursday and Friday too.  It was rushed but SO worth it!! Now I am at home, sipping another smoothie and getting ready to pack. I think dinner will probably be a repeat of last night — I really enjoyed it!

My flight leaves at 11:40 PM and I get into NJ bright and early at 8 AM! I am beyond excited to be home and to see my family.  I will try to recap a bit while I’m there if I can but I’m hoping to be so busy that I hardly have the chance :)

I had another sleepy/snacky day! Unfortunately, I also had work and apparently sleeping and eating all day is frowned upon at the office, hmmm. For breakfast, I squeezed in a yogurt mess before the big Monday meeting.

It wasn’t too bad today, but it did drag through the whole morning and right up to noon. I didn’t bring a lunch today so I had to pick something up and had the hardest time deciding! E. and I ended up heading to Coral Tree Cafe for a bowl of onion soup and half a special tuna sammie (no mayo anywhere!!).  I usually get this tuna on a salad but was craving the soup & bread today. Sorry about the cell phone pics!

After lunch, I still felt crazy snacky but held off for a bit before digging into a Blueberry Z-Bar. YUM!

All my food lasted me throughout the rest of the day and until dinner. I was practically nodding off at my desk by 5, so I skipped the gym and headed home instead. I started with a bowl of mixed veggies topped with lemon pepper.

Then I used the last 1/3 of my pizza dough to make a lil pie topped with mushrooms, green peppers, fresh basil, red onion and red pepper flakes. SO GOOD!!! I’m drooling all over my own picture and could definitely eat this again right this second!

Yup, the hunger bug won’t stop biting me so I drove over to Yogurtland for a cup of froyo. Those little brown dots are choc covered sunflower seeds. They were awesome!

I’m gonna try to get into bed early so maybe I will have more energy tomorrow. Hopefully I’ve banished the munchies for the rest of the week :)

Three Things for Monday

  1. Stopped snacking after the z-bar (this actually required some willpower LOL)
  2. Made a bowl of steamed veggies to bulk up dinner
  3. Measured the sauce & cheese for my pizza

This week feels like it’s off to a slow start! Work is dragging like whoa. Monday morning I woke up at 5 AM feeling sick and was up for a bit, but felt much better by the time I got into the office and dug into my yogurt mess.

A little before noon, I had my Chocolate Chip Z-Bar from Saturday for some pre-workout fuel.

Yup, I tried to make a gym stop during lunch on Monday!  I was able to hit the elliptical for 30 minutes, which was great, but I was racing back and forth between the office and the gym, and it still took me more than an hour.  So it looks like going to the gym during lunch isn’t going to work, but at least I gave it a try and found that out!

I took my really sore ankles and calves over to Coral Tree Cafe and treated myself to my favorite no-mayo tuna salad.

After work, Kate came over with a nice bottle of red from TJ. I had a small glass of Cabernet Sauvignon while cooking up dinner.  Julia, Kate and I split a baked acorn squashed stuffed with 2 servings of quinoa cooked with raisins & figs, 2 chile lime chicken burgers and one beef burger.  We ended up only making two servings of everything, but it made more than enough food for all three of us.  The acorn squash turned out perfect!

After dinner, we watched last week & last night’s Gossip Girl while eating dessert, which was a whole variety of treats.  I had some more s’more (haha) ice cream with one of Julia’s oatmeal chocolate chip cookies.

Plus a few slices of dried cantaloupe. I was way too stuffed after all this…definitely too many sweets!

Three Things for Monday

  1. Attempted to workout at lunch
  2. Ordered salad dressing on the side & only used half
  3. Limited myself to one small glass of wine

If I am going to be totally honest with myself though (and with you!!), I think this was my worst day of “three things” thus far.  Aside from the salad dressing at lunch, I didn’t feel like I was making conscious healthy choices, especially when it came to dessert.  I gave all those snacks last night some serious consideration as I was eating them, but I ate too many sweets anyway.  I want to be able to name off three good choices every day without having to think long and hard about it, so I will definitely keep working on that :)

I woke up tired again today! Luckily another yogurt mess was there to the rescue. Today I added in some figs after enjoying them so much in my dinner last night.

Lunch was a random mishmash of food I grabbed as I literally ran out the door.  It ended up being surprisingly delicious!  I had a serving of breaded eggplant, a nuked sweet potato, and a fuji apple.

Lunch held me over pretty well actually! Around 3:30 I had a pre-workout snack of ak-mak crackers with hummus. I love that this combo is under 150 calories!

Unfortunately, I was pretty hungry again by the time I hit the gym but I refrained from snacking and did 60 minutes on the elliptical. My ankles are feeling much better today, which makes working out a lot easier! I also had a new book with me, Queen of the Road by Doreen Orion, which helped the time pass quickly.

For dinner tonight, I was totally inspired by Kath’s calzones and decided to use one of my leftover dough balls from Sunday to make one.  I stuffed the homemade honey rosemary whole wheat dough with 1/4 cup sauce, 1/4 part skim shredded mozzarella cheese, basil, 3 chopped mushrooms and a big handful of spinach.  Here’s the calzone pre-folding…

This is the first time I have ever made a calzone and I think it turned out pretty great!  It’s weird how you can use the exact same ingredients you use to make a pizza, yet the end result seems to taste so much different. I also had a few veggies on the side.

Three Things for Tuesday

  1. Passed on ordering in Chipotle at lunch
  2. Refrained from drinking diet soda (I usually don’t drink this at work, but I had a huge craving for it today but made myself drink tea instead)
  3. Had a small glass of milk instead of dessert before going to bed

Okay you guys, it’s LATE and I’m needing some sleep.  Will I ever get to bed before midnight??  Hmmm, let me go ponder that question while catching those zzzs.  By the way, thoughts on TBL?!?!

Breakfast this morning was my last slice of Paska bread from Easter with a hard boiled egg on top, of course! So very delicious.

This breakfast lasted me a long time! Around 1, I met Katie Jo & Julia for lunch. It was great having the girls come entertain me at work :)

We went to Coral Tree and I got my favorite no-mayo tuna salad. I know there are a million good things at this restaurant but I can’t help but get this salad every time!

After the girls peaced out, I went back to work. Fun times. Late afternoon, I dug into my pre-workout snack. I have been carrying this bar in my purse for weeks now and it hasn’t tempted me one bit but today I couldn’t wait to have it!

At the gym, I did 40 minutes on the elliptical. Nothing very impressive. My workouts have been so halfhearted lately! After 40 I finished the book I had with me and didn’t have my iPod, so I headed out to the grocery store instead. Check out the cool new products I found at Fresh & Easy — lettuce blend with strips of beet mixed in and Ginger Peach tea!

While making dinner, I snacked on some strawberries and mango. Mango is on sale this week so I majorly stocked up! I’ve been missing it.

Tonight I decided to give black bean burgers a try! I came up with my own recipe of 1/2 cup black & kidney beans, diced green bell pepper/onion/mushroom, 1 egg white, 1 tbsp Bone Suckin’ BBQ sauce and 2 tbsp bread crumbs. Just a half cup of beans with these mix-ins made two patties that I broiled in the oven with a sweet potato cut into chips and some lemon/pepper seasoned brussel sprouts. Here’s everything all together with another tbsp BBQ sauce for dipping!

I’m totally in love with these burgers!!!!! They were so easy and insanely good!

For dessert, I was in the mood for something a little chocolatey.  If you thought that a no-pudge brownie couldn’t be improved upon…you thought wrong! I microwaved a single serve no-pudge brownie with 1/4 of a v. ripe banana and a small spoonful of Better N’ Peanut Butter. No-pudge will never be the same again!

Tomorrow is Thursday already, YAY! Crossing my fingers for nice weather this weekend :)

Lunching and shopping in the middle of work really makes for the best kind of day at the office :)

Okay, rewind. I woke up this morning thinking UGH no way work! Sadly, I just recently started my fabulous job so I can’t really take many sick days. So off to work I went!  Luckily my yogurt and MIT coffee pepped me up :) Looking familiar??

This baby had strawberries, half banana, grapes, 2 figs and half cup kashi. Around 1 I met my friend Kate for lunch who was sweet enough to come entertain me. Plus, we went shopping (my office building is basically attached to a mall tehehe) so it probably wasn’t too much of a hardship for her :)

We grabbed food from Coral Tree Cafe Express, a food court version of the amazing restaurant (http://www.coraltreecafe.net/).  This place is SOO good. Everything I’ve ever tried has been amazing. Of course I always get the same thing though — their tuna salad! They make the tuna with NO MAYO, just EVOO, celery, jicama, onions, and white wine vinegar. It’s so incredible. The tuna sits on top of a nice bed of organic baby greens, plus tomatoes, cukes, red onion, carrots, and garbanzo beans. Usually I get the house balsamic on the side but I forgot to ask so there was probably more dressing than usual but man it was good. Plus two pieces of bread on the side!  I ate one of those guys, plus one final satisfying bite of the second. We got to eat outside — look how sunny it is!!

Right now I am sipping tea and waiting for my boss to get out of a meeting so we can get back to work on a project. I am going to attempt the gym tonight, especially since I just got handed a whole bunch of new magazines…perfect for the elliptical!  Oops got to go, more later!!
