Breakfast this morning was my last slice of Paska bread from Easter with a hard boiled egg on top, of course! So very delicious.


I also had a lemon Dannon with half a banana sliced on top to fill me up.


This breakfast lasted me a long time! Around 1, I met Katie Jo & Julia for lunch. It was great having the girls come entertain me at work 🙂

We went to Coral Tree and I got my favorite no-mayo tuna salad. I know there are a million good things at this restaurant but I can’t help but get this salad every time!

After the girls peaced out, I went back to work. Fun times. Late afternoon, I dug into my pre-workout snack. I have been carrying this bar in my purse for weeks now and it hasn’t tempted me one bit but today I couldn’t wait to have it!


At the gym, I did 40 minutes on the elliptical. Nothing very impressive. My workouts have been so halfhearted lately! After 40 I finished the book I had with me and didn’t have my iPod, so I headed out to the grocery store instead. Check out the cool new products I found at Fresh & Easy — lettuce blend with strips of beet mixed in and Ginger Peach tea!


While making dinner, I snacked on some strawberries and mango. Mango is on sale this week so I majorly stocked up! I’ve been missing it.


Tonight I decided to give black bean burgers a try! I came up with my own recipe of 1/2 cup black & kidney beans, diced green bell pepper/onion/mushroom, 1 egg white, 1 tbsp Bone Suckin’ BBQ sauce and 2 tbsp bread crumbs. Just a half cup of beans with these mix-ins made two patties that I broiled in the oven with a sweet potato cut into chips and some lemon/pepper seasoned brussel sprouts. Here’s everything all together with another tbsp BBQ sauce for dipping!


I’m totally in love with these burgers!!!!! They were so easy and insanely good!


For dessert, I was in the mood for something a little chocolatey.  If you thought that a no-pudge brownie couldn’t be improved upon…you thought wrong! I microwaved a single serve no-pudge brownie with 1/4 of a v. ripe banana and a small spoonful of Better N’ Peanut Butter. No-pudge will never be the same again!


Tomorrow is Thursday already, YAY! Crossing my fingers for nice weather this weekend 🙂


Monday eats were a great kickoff for my week of healthier habits! I started with the usual yogurt mess. This one contained 2 figs, a cubed granny smith apple, frozen blueberries & half cup kashi.


For lunch I heated up my favorite Lean Cuisine ravioli bowl and crunched on some green peppers.


I started feeling snacky again not long after finishing, so I made a nice steamy rooibos tea with some cinnamon hazelnut Coffee Mate & splenda. This was a nice treat!


Workout fuel today was a Clif Mojo bar, the peanut butter pretzel flavor! I have been dying to try this bar. I definitely loved the pretzel bits throughout, but for 200 calories, I was surprised that it didn’t hold me over longer. Seriously, by the time I left the office, I was already hungry again! 


Instead of finding another snack, I hit the gym for 60 sweaty minutes on the elliptical. FUN!! Haha, not really, but it’s always nice to return to exercise after a few days off.  For dinner, I made a veggie omelet that turned into a veggie scramble with half cup egg beaters, baby bella mushrooms and spinach. On the side, I made sweet potato fries, roasted brussels, and a few roasted red onion pieces. This was very filling and delicious!


I finished up with the last Grey’s I had taped and then Julia & I watched Gossip Girl. DRAMA MAMA!!! Afterwards, I got into bed with a book and a little snack — 1/4 cup kashi, 1/4 cup oaty o’s, 1% milk, and 2 strawberries, sliced. I have been craving cereal lately, which is pretty unusual for me. This seemed like a much healthier way to handle that craving, rather than curling up in bed with a book and the whole box LOL.


I’m feeling pumped about the week ahead! I KNOW I can keep this up if only I TRY, TRY, TRY 🙂

Ah Monday, why are you such a pain?? This morning I had yogurt with mango, blueberries and half cup kashi.


I could barely make it to noon for lunch!! In fact, I didn’t make it to noon. I dug into carrot sticks and 1 tbsp lemon cilantro hummus around 11:45.


Then I had a Lean Cuisine veggie ravioli bowl. Ate this in 5 seconds!!


I felt like eating allllll day long. I broke into some pretzels and a diet Pepsi. I keep my cans of soda in my car so that I only drink one when I am really craving it and willing to leave the office to go down to the garage to get it. Today was one of those days! I ate pretzels until I finished the can. Probably 3 times what’s here!!


Finally I put the pretzels away. I held off a bit longer before digging into my pre-workout fuel — my FIRST Jocalat bar!! I decided on Chocolate Coffee for my taste test. This bar was YUM! I loved the slight coffee taste. There was a nice light chocolate flavor but of course I wouldn’t have minded if it was a little more chocolate tasting 🙂


I would definitely buy these again, although cherry pie & key lime are still my absolute faves!!  I wish I had held off a little while before eating this because I was hungry again by the end of the day but didn’t let myself snack any more. Good Kate!! I hit the gym for a very sweaty 60 minutes on the elliptical. I pushed the resistance up extra high and burned baby burned!  I grabbed the quickest thing I could as soon as I got home, green pepper with 1 tbsp hummus.


Eating this held me over long enough to actually roast some brussel sprouts and heat up the rest of my pizza, a slice of fruit and a sliver of potato.  Now it’s all gone! These were YUM.


After dinner I let myself splurge with a little more ice cream. Baby scoops, I swear.  Deeeelish! Plus 15 minutes of weights while watching GG. I’ve been slacking soo badly with weights and my arm muscles have gone to mush!! Definitely want to work on these so I can get back my sexy sculpted arms LOL.

Ahh GOSSIP GIRL, you are getting so good!!!


Only 3 days til my mom gets here! This week better go quickly — I’m so excited 🙂

Tuesday morning I dug into another 2 Newsroom bread heels with 1 tbsp almond butter/crunchy natural PB combo plus 2 tbsp cherry jelly, fruit, and coffee. This bread is killer and keeps me full way longer than oatmeal or yogurt mess! I wonder what’s in it/nutritional stats? Julia, does Newsroom have these?? Hmmm…anyway, it was awesome as usual.


Lunch was the other 6-inches of my turkey/veggie subway.  Holding off on the vinegar worked like a charm, and this wasn’t soggy at all!


Usually I have some kind of popchip or baked Lay’s with this type of meal, but yesterday I made a wonderful discovery — there is a FROYO place in walking distance from my office building!!! I actually walked back into the office and declared to everyone, “This is one of the happiest days of my life.” HAHA. I got a baby-sized chocolate and peanut butter. Best part is, there were probably less calories in this guy then I would have had if I ate the chips instead!


For the first time in what feels like forever, I finally had a chance to hit up the gym after work, so I snacked on this Kashi bar a little bit before going. It was good enough taste-wise, but honestly wasn’t that filling.  Bummer!  It was a free bar, so no biggie, but I wouldn’t spend the money on them myself.


I got in a good 60 minutes on the elliptical. It was hard to get into the groove and I kept wanting to quit, but I have a lot going on this week and don’t know how many times I will get to the gym, so I pushed through. I did some grocery shopping afterwards, and by the time I got home I was HUNNNGRY!

I snacked on grapes while I was cooking.


All day, I was craving a big ole ROAST — veggie roast that is!  I chopped up 1 medium sweet potato, 1/4 red onion, 1 shitake mushroom, 1 green pepper, and 6 brussel sprouts.  The brussel sprouts got tossed in a lemon pepper seasoning, while everything else just went in au natural. I also was reminded about Kath’s kale chips, which I’ve never made. Since I had a bunch of kale in the fridge, I decided to give them a try as well. Verdict? Surprisingly good! They got very crispy. The only negative was the kosher salt, which was entirely my fault because I used way too much. Next time, less salt and we have a winner!


To go with the veggie roast, I also broiled a TJ’s cilantro chicken sausage. I tossed everything together and topped with some fresh cilantro and 1 tbsp of Bone Suckin Sauce that I got from Diana in our swap. This was so good!!

Sometimes when I eat big dinners like this one, I wonder if I make TOO much food. I mean, that tray was HUGE! But besides the chicken sausage and sweet potato, which I didn’t over-portion, the rest is fresh & healthy veggies, so I have a hard time restraining myself to a set portion size. How important do you all think that is to overall calorie intake? Should veggies be a freebie-type food, or is it good to always measure these out as well?

I enjoyed this very yummy bowl while watching The Biggest Loser. How sweet is Mike?!? What a good kid. Here is a side view of the kitten babies sprawled out on my lap. They love late-night cuddling! They are like kids, angels when sleeping ONLY haha.


No dessert! Must be a first for me LOL 🙂

I finished the last of my strawberries last night, so I had oatmeal with half banana for breakfast instead.  This is what I ate all winter, but now that I’ve switched over to yogurt, the oatmeal just can’t compare! Plus coffee.


For lunch I went the bagel/hummus route again. This combo is just so good! I had an apple and yogurt on the side.


After lunch, I went over to the Farmers Market with two of the girls on my account team.  There is a small FM across the street from my office on Thursdays.  It’s so funny — everyone there is in suits!! It’s basically a FM just for all the offices in the area. I got all these brussel sprouts and green beans for $2!


Seriously, look at the size of some of these guys!!


We also got roses from the flower guy.  I stuck mine in a water bottle.  Here it is next to my pretty Asian art calendar. Aren’t yellow roses so pretty??


Around 3 I dug into this z-bar.  I’ve never tried any of these before!! I definitely liked the chocolate flavor.  It was a good lower-calorie option. Still, it doesn’t compare to some of the other bars. Maybe I should try some other flavors?


After work, I went to the gym for 60 minutes on the elliptical.  The workout went pretty quickly with my Thursday trifecta — Shape, Marie Claire, and the iPOD 🙂 I really need to start adding more weight training to my workouts.  I was good with it for awhile when I was going to a cardio/weights class, but lately every single time I go to the machines section, a personal trainer tries to get me to sign up for sessions.  Last time, I even made an appointment with one because I couldn’t say no and then my roommate called and cancelled it for me!! Maybe I should invest in some free weights for home?  Then I would just have to make myself use them…

After the gym, I went to Trader Joe’s to pick up ingredients for my dindin, inspired by another Farmers Market favorite…ready for it…

FRESH, HOMEMADE TAMALES!! I picked up a sweet corn tamale and decided to plan dinner around it. There is a stand that makes all kinds of tamales, fresh that morning.  I always get the sweet corn one. It looks and tastes like sweet corn, but I have no idea what else they make it with.  It’s addicting, really!! Anyone ever made these before?? I would love to know if they are the worse possible things to eat or not all that bad LOL. Here’s a view of the corn husk all peeled back:


So impromtu tortillas were born! Luckily my roommate let me dig into her supply of these awesome La Tortilla Factory tortillas.  Two are only 100 calories!!


At the store, I picked up green & red peppers, pineapple salsa, and cilantro chicken sausages. I cooked up all of this, plus some onions and half of the tamale. It was SO GOOD! I had two tortillas plus some leftovers on the plate that I easily finished.


AHH so good. Can’t believe I held off biting into this long enough to snap a picture LOL


I also picked up the Honey Moon Viognier when I was at Trader Joe’s. This is one of my all-time favorite wines. It’s seriously so good. I had to have a little glass!


Right now I am watching Grey’s & Private Practice and dreaming up dessert 🙂 Something with berries and chocolate maybe??

So I mixed some berries and pineapple and a half cup of kashi with a few spoonfuls of TJ nonfat yogurt. My first stab at non-Dannon/Yoplait type. I think I still need a little while to get used to it LOL.  I added some cocoa powder to chocolate it up a bit 🙂


Night! It’s almost Friday, YAYZERS!!

About an hour before I left work, I decided to definitely stop by the gym, so I tried a Lemon Larabar for a little workout boost. I liked it! The lemon flavor wasn’t too overpowering which was nice. I think I would stick with Key Lime though if I wanna go citrus.

I got in 45 minutes on the elliptical before heading home. For dinner, I decided to make a Trader Joe’s Chile Lime Chicken Burger. If you have never had these, I definitely recommend them!! Since these cook at broil, I decided to make a one-pan meal and make brussel sprouts and polenta at the same time.  I’ve never cooked these on broil before but everything turned out perfect! The polenta was especially crispy on the outside and soft on the inside, which I loved.


For dessert it was ice cream part deux! I had my leftovers from last night plus some strawberries and sprinkles.


I still wanted a little extra sweet, so I dug into two dozen of these cute vanilla mini meringues from Trader Joe’s. At only one calorie each, who can resist 🙂


I love desserts. Can you guys tell?!

After my weekend of snacking (seriously, I was better this weekend than I am most others!!) I was ready to start the week on the right foot!  I had coffee and my favorite yogurt blend for breakfast. This one had 1/2 banana, 2 jumbo strawberries, a few pieces of frozen fruit, a handful of grapes, and a half cup of kashi.  Check out my cute MIT coffee mug from my sis 🙂


I brought lunch to work today, but ended up going to a menu tasting for work instead.  It’s SO hard sometimes to stay on track at work when we go out to eat and I don’t have much choice in what to order…but I guess that’s sort of a lame complaint. Especially when the food is really good. So we went to Mirabelle, one of our restaurant clients. They are offering a new lunch menu and wanted us to test it out!! Here’s a rundown of everything I ate…

Starter: 4 artichoke leaves (is that what they are called??), 1 piece of calamari, some chopped salad w/gala apples, candied pecans and sherry vinaigrette

Main course: 1/4 wrap on spinach tortilla w/hummus, avocado, lettuce, tomato, cuke, carrot, sprouts, olives (ick) & sesame orange dressing; handful of sweet potato fries and a couple shoe string ones; 3 bites braised shortrib w/spoonful of mashed potatoes; 3 bites roasted jidori chicken breast w/spoonful wild mushroom barley

It was all really yummy!! I didn’t feel that full when we left because it was lots of bites here, bites there, but then I stayed full for most of the day, so I guess it was a lot more than I thought.

Around 4:30 I dug into my afternoon/pre-workout snack.  Whenever I plan on going to the gym, I usually try to eat something between 3-4 at work.  I’m usually peckish by then anyway, and if I don’t eat, I am way too hungry by the time I get home. Since I usually eat dinner around 8PM, it’s way too long to go from noon when I eat lunch to 8PM + working out without eating anything!!

Today I had a new find — Western Bagel’s Perfect 10 bagel.  Each one of these suckers is only 140 calories (20 fat cals), 2g fat (no sat or trans fat), 9g fiber, and 18 GRAMS OF PROTEIN! Of course it can’t compare to a good ole NY style bagel, but the nutrition is awesome and they taste pretty darn good, especially toasted.  I had 1/2 with a tbsp of my new hummus find from last night.  This yummy creation was a great snack for only 110 calories.

I also drank a cup of green chai tea.  Here’s the kind I used:

My snack held up pretty well! I went to the gym and did 60 minutes on the elliptical.  I was hungry when I got home, but not starving and tearing into the first thing I could get my hands on.  Instead, I made a salad with my boring remaining ingredients (lettuce blend, tomato, red onion) and added 4 halved, roasted brussel sprouts.  I got these from the Farmers Market near my office and they are jumbo and delicious.  I coated them with a light mist of EVOO and added some lemon pepper seasoning before cooking in the oven.  You couldn’t really taste the seasoning though after I added balsamic vinegar to the salad. I ended up really enjoying this!


I also made a veggie eggroll from Trader Joe’s with some edamame. Usually I eat more than this for dinner but for some reason I couldn’t think of anything else I wanted.


Finally my brain and belly came to an agreement and decided that a handful of grapes and 4 calimyrna figs would be a perfect dessert.  Again, very weird that I haven’t had chocolate today LOL. I won’t question it!! Sorry no pic, my camera does not seem to want to take a shot of all those seeds in the figs! Whew okay now it’s midnight and I am exhausted. My computer is soooo slow!! Off to sleep, zzzzzzzzzzzzzzzzzzz
