Thursday breakfast was another All-American 🙂 I am so loving this blend of fruit!

My lunch was a delicious duplicate of my lunch on Wednesday. Promise to switch it up today for meatless Fridays!! I am proud to note that everyone else in my office went to Chipotle to pick up burritos for lunch yesterday and I refrained 🙂

Also part of lunch was my leftover cauliflower mash. I held off eating this until around 3, so it doubled as my pre-workout fuel.

At the gym I did 60 minutes on the elliptical while reading a funny, girlie book about a rising TV food show star. Even my fun fictional books are about food LOL!

After a nice sweaty workout I met Katie Jo for dinner at Aroma. I ordered the Wild Rice + Tofu Salad: wild rice, marinated tofu, carrots, cucumbers, cherry tomatoes, and sliced avocado on a bed of baby mixed greens with our lemon-herb vinaigrette.

 Holy YUM! This salad was having a major party in my mouth. I started off dipping into the dressing but the salad was awesome without it, so I moved the dressing to the side AND I didn’t eat one single bite of that roll. I was too busy enjoying everything else to bother with bread!! The tofu is SO GOOD and the rice blend is pretty awesome too. I ate almost every single bite of this salad. I was pretty stuffed when I finished and I probably didn’t need to eat the whole thing, but it tasted so fresh and delicious and gave me such a healthy full feeling, rather than a greasy, fat one!

Kate & I had a great time chatting the night away — literally! I love when girl talk easily stretches for hours, don’t you?! I got home after 11 and made some tea before bed. No late night cereal for me. I am determined to make that my next habit that bites the dust!

I’m excited for the fun weekend ahead! I know that there is a British pub happy hour, huge dinner/clubbing birthday party, and French cafe brunch happening over the next three days. I know I will be having a kickass good time but I am a teensy bit worried about going overboard. Weekends = weakness for me! I need to keep myself in check this time. Any tips from you guys are always welcome of course 🙂

I’m still posting at lunch, so this is going to be short & sweet! Breakfast was another All-American yogurt mess, my favorite.

For lunch, I had salad with light balsamic dressing and a turkey sandwich. I used Oroweat Light bread, 2 1/2 slices peppered turkey breast & 1/4 a mashed avocado. I see this sandwich repeating itself over the next few days (yes, brought it for lunch again today!).

Post-lunch, pre-workout fuel was a Chocolate Chip Z bar. Ding ding we have a winner! I wasn’t a huge fan of the other two I tried (honey graham and chocolate brownie), but I liked this one a lot.

Last night I managed 15 minutes running on the treadmill and 30 minutes on the elliptical before calling it quits. I had to run to Target and was itching to get it over with so I could get home! I also stepped on the scale at the gym and the number was NOT so hot…at least it will strengthen my resolve, right?!

For dinner I heated up the Amy’s Indian Palak Paneer. I haven’t had much experience with Indian food before but I’ve always liked what I’ve had, and Target had this variety for only $3.19 so I decided to give it a try. It was good! This entree is 270 calories and decently filling, considering that the whole thing fits on a salad plate.  I also added a few pieces of raw cauliflower on the side.

The cauliflower I snatched from my big pot where I was cooking up a batch to test some cauliflower mashed “potatoes!” After heating the cauliflower until tender, I hand-blended the veggie, adding a few tbsp of milk and water as needed. I also added some onion powder and salt to taste. On a whim, I tossed in a wedge of light Laughing Cow to thicken up the whole mixture. No butter or cream needed! On a whole, I liked the cauliflower mash, although I won’t say it really tasted like mashed potatoes. At least, not the ones I am used to eating! I will definitely play around with this recipe in the future.  I’m not sure if I loved the Laughing Cow cheese, or the onion powder.  I ate a nice little bowl and saved some for lunch today.

I made a little yogurt bowl for dessert. This contained 3 oz vanilla yogurt, 1/4 banana, a handful of frozen blueberries, and a heaping 1/4 cup Kashi Honey Sunshine. BTW, Kashi is on sale at Target if you want to stock up!

This snack was yummy but really not needed. I have been doing much better this week but I think the next thing to go is the mandatory cereal/milk/yogurt bedtime dessert. Even though this came in at under 200 calories, I really wasn’t hungry. I think recognizing this and not eating a snack when I’m full will definitely help me get rid of the few extra pounds. What do you guys do to combat nighttime munchies?!

Can’t believe it’s Thursday already! Tonight I am going to dinner at Aroma Cafe.
