What a quick weekend!! And now it’s almost Wednesday?! Yesterday I kicked off the day with a yo-mess, then I used my deconstructed taco leftovers to RE-construct a taco! Confused? I had one La Tortilla Factory tortilla in the fridge begging to be used, so I heated it up and added the other 1/2 piece of tilapia, 1/4 avocado worth of homemade guacamole, lettuce, mango cubes and S+P. I definitely liked the chip dippers better, but the mango was a really nice addition!

Later in the afternoon, I managed to bypass a huge tray of cookies and had some carrots + hummus and a handful of popcorn for pre-workout fuel. How did I forget about popcorn?! Such a nice, low-cal FUN snack. You just have to be careful not to burn it in the office, and make sure you can share with your coworkers. Popcorn is one scent that really carries, have you ever noticed that?!

I had a nice sweat-fest on the elliptical after work. I’ve been in a LONG exercise rut lately, but for some reason am undergoing a nice attitude change where food and workouts are concerned! I even whipped out the high school punk phase with some Streetlight Manifesto. After a quick trip to Target and tossing in some laundry (FINALLY!), I got settled down for dinner. I was jonesing for a TJ Chile Lime Chicken burger :)

I also wanted to use up a potato I had for my side, and just wasn’t feeling the homemade fries. No, not burned out on those yet, but I do make them an awful lot! Instead I was inspired by the memory of a killer no-mayo potato salad my friend Becky made earlier in the summer for one of our Laguna Beach bbqs. Here’s my version!

No-Mayo Potato Salad

Serves One

Peel and cube one potato. Add to pot, fill with water, bring to boil, and cook until fork-tender. On the side, dice (all to taste) red onion, green onion, red bell pepper and basil.  Drain potatoes, add to onion/pepper mixture. Drizzle lightly with red wine vinegar, balsamic vinegar, EVOO and S+P.

MMM!!! I tossed mine in the fridge for a few minutes while I switched out the laundry so it would cool down a little bit, but was too hungry to wait much longer than that :)

I don’t think that picture can really do it justice, because it was pretty amazing! After dinner I caught up on True Blood (poor Sam!) and enjoyed a Skinny Cow fudge pop. I love the chocolate drizzle on those. Anyone have some other nighttime snack musts?! I’m always up for a good sweet treat testing :)

Will the weather ever get summery?! I woke up Saturday morning to MORE CLOUDS and decided a batch of blueberry pancakes were in order. I used 1/2 cup whole wheat mix, 1/4 cup Maine bloobs, 1/4 cup egg beaters, some H2O and 1 tbsp maple syrup to make this plate. They were really thin but good!

Thanks to the icky day outside, I spent much of the day cleaning, reading, and watching TV. I took a break around 11 AM to hit the gym for 45 minutes on the elliptical. My ankle has been bothering me the last few days, and this is the only way I can workout without really aggravating it! Followed by grocery shopping, I got home pretty hungry for lunch and pulled out some of my purchases to make a chile lime chicken burger topped with pickles and grilled onions and sweet potato fries.

After lazing around all day, I was motivated to get out of the apt and met Kate W for a late dinner at Yatai.  She just moved back to LA and has never been to our favorite sushi spot, so I had to introduce her! I started with a berry beer and some shared edamame. For our main meal, we split some favorites. Sorry for the recycled pictures!

I half passed out awkwardly on the couch and roused myself at 2 AM to get into bed. Then today I woke up around 8 to more clouds.  Boo!  For breakfast I went back to basics with my regular yogurt mess. Lots of fresh and frozen fruit — it was delicious!

After more cloudy day activities (i.e. reading, watching tv, and cleaning again!!), I snacked on some Newsroom toast with Better N’ PB and cherry jelly.

Then the SUN came out late afternoon! I grabbed an apple to enjoy with the good change in weather.

Even thought it wasn’t hot, I decided to make the most of the blue skies and headed down to the beach to read on the sand. It was incredibly windy but I was so happy to finally be outside :)

I also got to swing by Panera, meaning bread and black bean soup on the beach…

This weekend flew by in a minute!! I can’t believe it’s almost Monday already.  I think I have another crazy week coming up but hopefully I can squeeze some fun stuff in there too.  Right now I am just bumming around before going to the airport to pick up Julia. She has been in MN all week and I’m so glad she’s almost home!! Her flight gets in 11:30ish so I will probably try to get to bed after that :)

Staying up late watching True Blood on Saturday left me exhausted I guess because I slept until 10:30 AM on Sunday!!! People, this is a major accomplishment and basically unheard of…usually I wake up by 8:30 on the weekends and consider that an extra two hours, so 10:30 was great. Guess I needed it! I decided to whip up some pancakes again just because it was the weekend and I could! I used 1/2 cup of the whole wheat mixture and added in 1/4 cup of those baby Maine blueberries from Trader Joe’s.  Topped with 1/2 banana and 1 tbsp vanilla bean maple syrup, these were delicious! (Still think I liked Saturday’s chocolate pancakes best though!!)

I basically did nothing Sunday and was insanely lazy. I always have a huge list of things to get done over the weekend but I am so busy during the week that my body and mind just craves relaxation! The kittens and I cuddled on the couch and watched more True Blood.

I decided to use some homemade whole wheat pizza dough to make my late lunch. I rolled the dough out pretty thin and topped it with tomato sauce, light cheese, zucchini, mushrooms, green peppers, vidalia onion and fresh basil. It was really delicious!

I also got into some unnecessary snacks…an un-pictured Skinny Cow and some Puffins. We are definitely breaking up again when I am through with this box. Willpower = out the window!! Meanwhile, the kitten babies moved on from me and snuggled together. How cute are they??

Courtney came over for dinner and to watch He’s Just Not That Into You with me and Jules. I took over in the kitchen and made whole wheat pasta with tomato sauce and fresh basil, chile lime chicken burgers and roasted eggplant and zucchini to eat while watching the movie. This meal was so quick and easy to make and tasted great!

I thought the movie was really cute and fun. I am such a sucker for any chick flick basically. Court brought over cocoa meringues and brownie bites from Whole Foods for dessert. The meringues were good but the brownie bites were amazing! Between the three of us, we ate almost the whole container. Too bad I didn’t check until AFTER eating them that the brownies are almost 100 calories each!!!!! No wonder my belly was stuffed beyond belief by the end of the movie.

Lunch was somewhat boring but good, just a bowl of Progresso minestrone soup. I didn’t have anything packed when I was running out the door, but am glad that I grabbed this so I didn’t have to spend money or calories on ordering food.

After work, I got an early start on dinner with a Newsroom 9 Grain bread heel topped with a schmear of Better N’ Peanut Butter and some cherry jelly. I was just too hungry to wait!

Even though the toast kept me full for another hour or so, I was still craving CARBS and debated mashed potatoes and pancakes but decided on continuing the breakfast theme with an omelet. I used 1/2 cup egg beaters, vidalia onion, basil and mushrooms, with red pepper slices on the side. The breakfast theme let me have another bread heel with jelly on the side :)

Then Julia and I headed out to a BBQ restaurant to meet some guys from her work for a drink.  I had a glass of Pinot while we chatted away. Knowing the bartender meant we got a nice free top off! I avoided eating any of the fries, but did steal Julia’s pickle! It was nice getting out and having some entertaining convo after a long day at the office. Jules is leaving tomorrow for MN and I just wanted to soak up my Julia time!!! I am going to miss her!!!

Long story, but around 11 PM we headed to Santa Monica to scope out parking spaces for Julia to leave her car for the week. We just walked back in the door (it’s 12:30 now) and I can tell that my blood sugar has seriously hit rock bottom because I am being a total crank yanker and am about to make a bowl of instant oatmeal. Instead of taking/uploading a boring picture of that, I leave you with this…

Saturday morning, I tried to sleep in, but I woke up early anyway.  I snacked on some watermelon and had a very lame cup of coffee.

I have been craving pancakes every time I see a post about them, so I decided to make my healthy-ish ones! I have a great whole wheat & oats pancake mix that I mixed with egg whites, water and 1 tbsp cocoa.  This recipe makes a pretty full plate of pancakes!! Topped with 1 tbsp vanilla bean maple syrup, the whole plate is just under 300 calories, plus half banana for garnish.

I laid around all morning, playing some catch-up with my DVR and snacking on copious amounts of watermelon.  Lunch rolled around before I knew it, and I made another personal pizza with my homemade dough and the same toppings from Friday night — sauce, cheese, mushrooms and red onions.  The cheese is a new find (thanks to Julia!!) from Trader Joe’s that’s only 45 calories per 1/4 cup.  So melty and delicious!

After lunch, I took a walk to Crossroads to find some jeans, but that was a no go. Luckily, there is another location in walking distance the opposite direction, so I hit that one up too and found a cute pair of lightly worn Citizens for $30! Perfect for in-between jeans that I can wear until my too-tight ones are fitting again.

I stopped off at Trader Joe’s on the way home, making my round trip about 3.5 miles. I love being able to walk to get my errands done! Back at the apartment, I was suddenly ravenous so I cut into a red pepper for a mini appetizer.

I also couldn’t resist making a cup of the special coffee treat that Julia brought home — Godiva Creme Brulee. IT WAS SO GOOD. There are no words!!! I am officially spoiled. I think I’m gonna be hopped up on caffeine…can’t stop drinking this :)

Dinner was a perfect Memorial Day weekend-style meal, minus the actual grill. I cooked up a chile lime chicken burger, sweet potato fries, and a piece of corn on the cob. I ate my corn dry & salty, with half cut off the cob. My two favorite ways to eat corn are on the cob and cut right off it, so I decided to go for both :)

After dinner, I got ready to go out for Court’s birthday. Of course I was running late and by the time I got down to the beach, everyone was already drunk and leaving early from the bars! So I ended up not drinking anything at all, and just chatting with Courtsie and her friends for a bit before heading back home. I got home a little after midnight and woke up this morning before 7 am. WHY?!?! I like early starts but I wouldn’t mind getting a few extra hours, ya know??

Three Things for Saturday

The final fifteen minutes of Grey’s was awesome!!! I was freaking out, no big surprise there :)

Last night I had an epic dream involving my ex-boyfriend, his upcoming birthday, and all his friends, which was mildly traumatic. WHY are dreams so annoying sometimes?!?  I ended up waking up earlier than usual and got the morning started. Breakfast at work was the reg, with Heart to Heart this time instead of Honey Almond Flax.

Around 11:30, I started to feel weird and thought maybe I would make lunch early. But as soon as I stood up, I got intensely dizzy and nauseous. It felt like maybe my blood sugar dropped or something?  I say that because that happens to my mom a lot…. Anyway, one of the office girlies let me sit on her floor, in the attractive head-between-the-knees style, while she fed me a couple almonds and cashews.  It took me about 5 bites to eat each almond. I mean, seriously, what was going on with me?!?!  Then I laid down at my desk for a bit before the nuts kicked in and I felt ready to eat something substantial. Luckily my boss is out of town and everyone I work with is sweet as a peach, so no one minded when I turned out the lights and took a little head rest.

My client lunch got canceled today (thank god, right??) so I didn’t have to eat restaurant food AGAIN. How is it that the one week I decide I need to stop eating out so much I have to go out to lunch every day? Weird. I brought my favorite Lean Cuisine, leftover spaghetti squash, and a tiny leftover chicken strip from the other night. All mixed together! I was in total shock how good this tasted.

I should have just peaced out of work but I sucked it up and finished the day. I did skip the gym though and just stopped off at the car wash. My girl was diiiiiiiirtay! Now she is totally gorge. When I got home, Julia told me about her fresh homemade guacamole so I had to make a little tasting plate. How cute are these baby crackers?!

Usually I go to sleep pretty late so I try to go to the gym or run errands after work so I can sit down for dinner between 8-9.  Tonight though, my plan is to get to bed earlier than usual so I got to eat before the sun set. It was nice!  I still wanted something sweet so out came the ice pop :)

Wow, today was CRAZY! I started off the day right with an especially filling yogurt mess, featuring my last Oikos-coupon “purchase.” Here’s everything before and after!

This breakfast kept me plenty full for hours — love that!  The extra protein is definitely the #1 reason why I will keep buying this yogurt.  For lunch I tried out some TEMPEH.  Last night, I poached the entire package, then baked it with a drizzle of rice vinegar and toasted sesame oil for a little flavor. I don’t know if any of that changed the taste, but I didn’t want to marinate it because I was planning to make this sammy with HUMMUS. My final combo ended up being Oroweat Light bread, 1/4 package of tempeh, 2 tbsp hummus, and baked eggplant (just slices I roasted along with the tempeh), plus a couple roasted carrots on the side.  The tempeh was good!!! Definitely not as tasty as the one I had a few weeks back at RFD though. I need to check out some fancy ways to cook this baby!

Even though I was pretty full, I had my first GNU bar packed too and I was dying to test it out!  Today I grabbed the Orange Cranberry flavor.  I was so pleasantly surprised by the low calorie count on these guys!  It’s nice to get a bar that isn’t basically a meal replacement but a snack instead.  I loved the orange and cranberry flavors!  AND 12 grams of fiber.  Sweet!!  I will definitely be adding these to my bar rotation :)

After I ate, the day started getting crazy!!!  One of our clients is going on a press trip TOMORROW and we were still missing most of the information for the releases, so I was writing and calling and researching — frantically LOL. One of the guys in the office brought around some chocolate and it looked too good to pass up!  This Salty Dog was dark chocolate with butter toffee bits and sea salt. MMM!

After my lil chocolate break, the frenzy resumed!!! I spent an hour reading every single sentence aloud to the client…very happy to send that off to her hotel to print! Yes, it was that last minute!  I had planned Target, Rite Aid, gym & library after work, but I got out a lot later than usual and was just seriously spent, so I went straight home.  Probably should have pushed through, but it was well-deserved I think!

For dinner, I was dreaming of some carby Italian food.  I made 1/2 cup (uncooked) WW pasta, a TJ chile lime chicken burger with ketchup schizzle drizzle, steamed broccoli, and the rest of my TJ eggplant.

Three Things for Tuesday

  1. Ate a very protein & fiber packed lunch
  2. Kept myself to taste testing one square of chocolate
  3. Skipped the sweet treat after din-din (I really wanted some ice cream but needed a #3 so no dessert for me!)

Oh yeah, I almost forgot, I won a gift card to Smoothie King from little miss Healthy Ashley!!!!!!! My first blog giveaway WIN!!! I used to work at a Smoothie King throughout high school and know all the secrets to ordering the perfect smoothie. Can’t wait to hit that place up again and throw them for a loop with my wacky drink order — it’s been too long.  Thanks Ashley!!

This week feels like it’s off to a slow start! Work is dragging like whoa. Monday morning I woke up at 5 AM feeling sick and was up for a bit, but felt much better by the time I got into the office and dug into my yogurt mess.

Yup, I tried to make a gym stop during lunch on Monday!  I was able to hit the elliptical for 30 minutes, which was great, but I was racing back and forth between the office and the gym, and it still took me more than an hour.  So it looks like going to the gym during lunch isn’t going to work, but at least I gave it a try and found that out!

I took my really sore ankles and calves over to Coral Tree Cafe and treated myself to my favorite no-mayo tuna salad.

After work, Kate came over with a nice bottle of red from TJ. I had a small glass of Cabernet Sauvignon while cooking up dinner.  Julia, Kate and I split a baked acorn squashed stuffed with 2 servings of quinoa cooked with raisins & figs, 2 chile lime chicken burgers and one beef burger.  We ended up only making two servings of everything, but it made more than enough food for all three of us.  The acorn squash turned out perfect!

After dinner, we watched last week & last night’s Gossip Girl while eating dessert, which was a whole variety of treats.  I had some more s’more (haha) ice cream with one of Julia’s oatmeal chocolate chip cookies.

Three Things for Monday

  1. Attempted to workout at lunch
  2. Ordered salad dressing on the side & only used half
  3. Limited myself to one small glass of wine

If I am going to be totally honest with myself though (and with you!!), I think this was my worst day of “three things” thus far.  Aside from the salad dressing at lunch, I didn’t feel like I was making conscious healthy choices, especially when it came to dessert.  I gave all those snacks last night some serious consideration as I was eating them, but I ate too many sweets anyway.  I want to be able to name off three good choices every day without having to think long and hard about it, so I will definitely keep working on that :)

I woke up tired again today! Luckily another yogurt mess was there to the rescue. Today I added in some figs after enjoying them so much in my dinner last night.

Lunch was a random mishmash of food I grabbed as I literally ran out the door.  It ended up being surprisingly delicious!  I had a serving of breaded eggplant, a nuked sweet potato, and a fuji apple.

Lunch held me over pretty well actually! Around 3:30 I had a pre-workout snack of ak-mak crackers with hummus. I love that this combo is under 150 calories!

Unfortunately, I was pretty hungry again by the time I hit the gym but I refrained from snacking and did 60 minutes on the elliptical. My ankles are feeling much better today, which makes working out a lot easier! I also had a new book with me, Queen of the Road by Doreen Orion, which helped the time pass quickly.

For dinner tonight, I was totally inspired by Kath’s calzones and decided to use one of my leftover dough balls from Sunday to make one.  I stuffed the homemade honey rosemary whole wheat dough with 1/4 cup sauce, 1/4 part skim shredded mozzarella cheese, basil, 3 chopped mushrooms and a big handful of spinach.  Here’s the calzone pre-folding…

This is the first time I have ever made a calzone and I think it turned out pretty great!  It’s weird how you can use the exact same ingredients you use to make a pizza, yet the end result seems to taste so much different. I also had a few veggies on the side.

Saturday morning, I woke up way too early as usual, so I caught up on some TV while eating my yogurt mess.  I used another (#3 out of 4!!) of my Oikos coupons and tested the blueberry variety. It was good, but I liked the vanilla better, maybe since I am adding fruit myself anyway.  I am still crossing my fingers on finding the honey one! The Oikos makes for a much thicker yogurt base, can’t you tell?!

After a relaxing morning of TV catch-up and packing for my night in Laguna, Becky picked me up and we headed over to the outlets.  On the way, we stopped into Whole Foods for some lunch goodies. I got an amazing mix of different quinoa and wheatberry salads, plus some veggies and pieces of pineapple. I ate every bite!

I also ate about half of this piece of chicken for a protein boost. Whoa, I was STUFFED after all these goodies!

Finally we made it to the outlets and started shopping for Becky’s upcoming move to NYC.  She leaves in just a few weeks (!!!) for the NY Teaching Fellows and wanted to get some gear for her new work environment.  The Southern California uniform of flip flops, yoga pants & tank probably won’t quite cut it there LOL. We found some AMAZING sales, and I ended up getting a very bright yellow skirt and an equally bright yellow top at Banana Republic. After walking around the mall for 4 hours or so, my still-full belly was asking for some froyo so we swung by Haagen-Dazs and I grabbed a cup of regular vanilla with rainbow sprinkles. This perfectly hit the spot!

Tired but successful, we headed back to Becky’s place in Laguna…definitely stopping at Starbucks on the way for a skinny vanilla latte. Yummy and much needed!

Back at Becky’s, we lazed around and waited for Julia to drive down after work and meet us for dinner. Becky and I talked about books (thanks again for slipping me The Red Tent!!) and drank her family’s signature Cosmo Lights.  Here’s mine chilling with some cute tabletop decorations!

When Julia arrived in Laguna, we all scrambled to get ready and make it out to dinner before the kitchen closed. Why oh why am I always on the latest schedule?? We got to the restaurant maybe a few minute before ten and immediately ordered a bottle of champagne to celebrate Becky’s birthday. Cheers BeckY!!!!

Julia & I wanted to take Becky out for a special dinner to celebrate, so we went to K’ya, since Becky had never been there before and we thought it would be nice to do something different. Score!!! This restaurant was SO good. Everything was basically priced to share (served tapas-style and mostly $5 dishes), but the portions were way bigger than we expected!  This place was a real deal! Of course we couldn’t leave without some singing! Our waiter brought over a chocolate cake dessert with a candle and Becky tolerated our off-key, enthusiastic rendition of HAPPY BIRTHDAY.

The three of us shared the warm chocolate cake, eaten along with bites of chilly ice cream.

But the real star was the French Toast-style dessert. DELISH!!

After dinner, Julia cabbied it home and Becky and I went next door to The Sandpiper (apparently only people who don’t live in Laguna call it that, everyone else just says The Piper) and met up with Kate and one of her friends who was in town visiting along with her brother and two Italian cousins.  We all just danced the rest of the night away!  Around 1 AM I turned into a tired crazy lady and we all made our way home where I got into bed and crashed hard.

Julia & I were up with the sun so we could get back to LA before her 10 AM shift at work. We stopped by the Becky & Kate recommended Shirley’s for breakfast to-go.

I got an amazing oat bran bagel with light cream cheese on the side. Everything I ate this weekend was seriously stellar!

I also snagged a diet lemon Snapple. For some reason, I couldn’t even attempt coffee. Too early maybe?

I got to take a nice little power nap when I got home, which was great and much needed. Afterwards, I spent the day cleaning, doing laundry, and being lazy. Around noon, I snacked on some frozen greens — peas and edamame.

Since I had plenty of time to make lunch and didn’t get to do my pizza Friday this week, I decided to make some dough and roll out a mini pizza for lunch. I used the honey whole wheat recipe and separated it into 3 balls.  I rolled some fresh rosemary into the crust too, and 1/4 cup oats, for some extra taste and texture.  I topped the pizza with tomato basil hummus, mushrooms, more rosemary and sea salt.  Very basic and very good!

The pizza kept me full for hours and hours. Dinner came in bits and pieces between 7-11. First, I had some red pepper slices.

Then I had a chile lime chicken burger with a nice little swirl of ketchup.

I could NOT think of what else I wanted to eat with this, but Julia finally saved the day by letting me steal a nice big bowl of her spaghetti squash.

All my dinner items were eaten simply to get me to dessert. I had a huge craving for ice cream ALL day yesterday and decided to eat some after dinner instead of during the day (for me, that always turns into eating it ALL day).  I found a new slow churned limited edition flavor that I haven’t seen yet — S’mores — and just had to give it a try!

This flavor has chocolate and toasted marshmallow light ice creams with pieces of marshmallow, graham crackers, and chocolate chips. It’s awesome!! If you like s’mores, I definitely recommend this one!

On a somewhat unrelated note, I read about Jenna @ Eat Live Run’s terrible loss this morning, and wanted to just put it out there to the universe that everyone is thinking of her and to please send some positive thoughts and vibes her way.

Three Things for Saturday

  1. Skipped the pizzas and pastas I was eyeing at WF in favor of the whole grain salads, veggies and protein
  2. Ordered non-fat froyo at Haagen-Dazs instead of ice cream
  3. Decided not to snack before going to dinner, ever though we didn’t eat until 10

Three Things for Sunday

  1. Ordered light cream cheese on the side and spread a pretty thin layer on my bagel
  2. Made my lunch pizza without any cheese
  3. Refrained from eating any of the homemade oatmeal chocolate chip cookies Julia was baking last night (smelled amazing though!!!)

Happy Belated Administrative Professionals Day!! That’s what we were shouting when we surprised the office managers with brunch Friday morning. Everyone brought in food and we had a little potluck.  I donated chocolate chip muffins, homemade by India Thursday night, to the table — thanks India!!  We got a huge jug of Starbucks coffee.  I had two cups and MAN that stuff is way stronger than what I make at home.  I was not wired at all but in a caffeine stupor.  I also had a bagel (just half is pictured here but I ate the whole thing!) with low-fat cream cheese, a slice of chocolate rugelach, and some apple slices & cubes of pineapple.  VERY FILLING!

For lunch I brought my leftovers from last night. These burgers are great. This hummus is great. I love this meal!  Instead of sweet potato on the side, I sliced up some polenta and nuked it. It’s much better when baked/broiled, but it fit in my mini tupperware and was easy to make (two big lunch requirements LOL).

I had this piece of rugelach x way too many more bites along with some apple slices and pineapple, making me lose the good food feeling I had after lunch.  The rugelach was absolutely delicious but I definitely overdid it with breaking off and eating too many pieces because I was FULL to the brim on sugar and it did not feel so good.

Luckily Julia was home and wanted to go on a hike with me after work.  We hiked the hard side of the canyon going up, and ran down the middle paved trail. Man, one week break from exercise really does make a difference! I was huffing and puffing way more than usual. On the way home, we dropped into Coffee Bean and I got an iced coffee to help me power through the night!

Of course, we were running late as usual and got home at 8:30 still needing to shower, eat dinner and get ready to go to an 80s tribute show at 9:30, oops! I had a La Tortilla Factory tortilla stuffed with a TJ chile lime chicken burger and some tomato & basil hummus with broccoli on the side. These burgers have 19 grams of protein!

By some crazy miracle (or because the boys knew we would be late and told us to come an hour earlier than the band went on LOL), we got to the bar before the show started.  The 80s band was awesome!! I wanted to hold onto the healthy mindset I had forced between eating all that pastry and going on a hike, so I stuck to diet coke at the bar. Surprisingly I don’t need a drink to dance at a bar, crazy, right?!

When I got home around 1 AM, I was pretty hungry so I poured maybe a cup, cup & a half of Kashi with some strawberries and caught up on The Office!

Today I am headed to the outlets and then Laguna Beach for dinner with Becky.  Hope y’all are having a great weekend!

Three Things for Friday

  1. Walked to the canyon (adds about 4 miles round trip to the hike) instead of driving there
  2. Low calorie, high protein dinner
  3. Drank only diet coke at the bar

Ahh going to bed early was such a good idea! I felt 100 times better today. I decided to change up breakfast this once and had a Perfect 10 bagel with 1 tbsp almond butter, 1 tbsp cherry jelly and half a banana, plus coffee. Almond butter holds me over for so long, it’s crazy!

I have to read basically every magazine under the sun for work, and I keep coming across photos of yummy looking cupcakes. Don’t you just want to sink your teeth into one of these??  This issue of Family Circle has me thinking of hitting up Sprinkles or Crumbs this weekend for something extra indulgent :)

For lunch, I went to get my other 6 inch turkey Subway, and someone threw it out!! What?!? Luckily I had just gone to the grocery to get some fruit and pretzels to eat with my sub and had picked up a Lean Cuisine to keep in the freezer, so I had that instead.

Then before heading to the gym, I fueled up with some grapes and popcorn.

At the gym, I did a strong 60 minutes on the elliptical. I made an awesome salad for dinner, with tomato, fresh motz, brussel sprouts, roasted red onion, basil & olive oil.  These mini motz balls are only 60 calories for 1 serving!!

I also made a Trader Joe’s chile lime chicken burger with sweet potato fries and a few kale chips. This whole meal was SOOO good!

For dessert, I was craving some ice cream but skipped the grocery store after work so I didn’t have any on hand. Probably a good thing because I can NEVER eat just one serving! Instead I dug into the pumpkin spice cookies that Diana sent me. NINE of these only have 150 calories!!! I had one serving with a mug of diet hot choc. The cookies dipped into my mug were oh so yummy.

Right now I am watching the end of the Biggest Loser!!!!!!! I don’t want to spoil for anyone but whoa this is crazy!!!!!! Then I need to get to bed pronto…the lil extra bit really helps :)
