I woke up today without my alarm! I guess I forgot to set it, but I rolled over at 6:50 and was wide awake — whew! Today was one of those Mondays where I really wished it were still the weekend, but I got at least a little pick-me-up from my yummy yogurt mess. I am still out of kashi cereal but had another biscuit so I crumbled that up instead. So good! Especially with the fresh mango.


For lunch I tested out the Healthy Choice Cafe Steamers line as a new possible easy lunch option.  I decided on the Roasted Chicken Marsala, which listed white meat chicken & penne pasta w/green beans and marsala wine sauce as the descriptor.  The nutrition stats for this meal are 240 calories, 5 g fat, 5 g fiber, 17 g protein. Love the low cal/high protein numbers! Overall, it was pretty good. The pasta was by far my favorite part. I am just REALLY not a big fan of any kind of frozen entree chicken. It was perfectly fine and there weren’t any “bad” bits, but I can never bring myself to fully enjoy it like a regular, self-cooked piece of chicken!

Around 4 I decided to snack, mostly out of boredom because lunch held me over really well.  Plus I was planning a workout, and I always like to have something to eat a little before exercising to tide me over until dinner.  I had a mug of diet hot chocolate and peanut butter Fiber One bar.


On the way home, I just could NOT motivate myself to go to the gym! My body wanted exercise, but my mind didn’t want to be cooped up. I decided on a nice run outside since the sun was still shining. Fresh air did some good and helped me clear some of the mental cobwebs I couldn’t seem to shake today. I ran a little more than 2 miles and then walked another 2.3ish while chatting with my mom. Another good way to clear mental cobwebs 🙂

Back at the apt I had some grapes while cooking dinner. I could eat these ALL day long!


For dinner, I made a veggie omelet with egg beaters, red onion, and mushrooms.  On the side, I sliced up a roma tomato with dried basil and salt. I also made some mini potato & cheddar pierogies.  At 130 calories for 7, these make a great addition!! Most of my family is Ukrainian so I am used to the real deal (aka many hours of labor for the perfect pierogies), but these are nice when you only have 5 minutes, not five hours 🙂 Plus a glass of milk.



After dinner, Julia and I watched GOSSIP GIRLS (IT”S BAAAAACK!!) and I had the last strawberry shortcake with a rooibos tea. Yummers!



Humpday already, YAY! For breakfast, I had another yogurt mess with blackberry yogurt, half banana, half cup kashi, and one cup mangolicious blend, plus coffee.


Since I had a dentist appointment at noon, I decided to have a coconut water and some grapes to tide me over until my late lunch. I missed my coconut water!


My tummy was growling though when I got back to the office around 2, so I toasted up a bagel with hummus and ate that with the other half of my tomato/motz/brussel sprout salad from the night before.


This salad definitely deserves a repeat!!


Later in the afternoon, I dug into my pre-workout fuel: a gala apple and pretzels dipped in 1 tbsp almond butter. I only had a flimsy plastic knife, so the apple “slices” are more like apple slivers!


I really, really wasn’t in the mood for the gym, but I sucked it up and pounded out 45 minutes on the elliptical before heading home.  I had a very crunchy pear while I was thinking of what to make for dinner…


I was craving some tortillas, so I decided to plan my dinner around them.  I mashed & heated up 1/2 cup black beans with some corn and salsa, then shredded 1/3 cup worth of extra sharp cheddar to top. I split all the ingredients between 2 La Tortilla Factory Tortillas.  I know I say this every time, but I love that these are 50 calories each so I can easily eat two!! It just makes my meal seem so much bigger. I popped the whole thing in the toaster for a few minutes.  Here’s the before and after 🙂




This was REALLY good, and healthy!! It’s amazing how a little cheese can really go a long way. For dessert, I had a repeat from last night: diet hot choc and a serving of pumpkin spice cookies.


Now I am just watching some TV before getting into bed. I am just having a BLAH night…hopefully some sleep will help. And it’s getting close to the weekend, whew!

Brunch was just as good as I thought it would be! I walked over to the restaurant and we scored a table outside.  It’s amazing out here, in the 70s, so perfect for outdoors weekend brunching 🙂

I started with the French Press for one.


It made a couple mean cups of coffee! With skim milk and splenda:


Steph and the other girls stuck with water, boooring.


I decided to go with the espresso semi-sweet chocolate chip pancakes. A stack comes with three, but I just ordered one.  These guys are HUGE!


That weird circle in the middle is from the pat of butter I promptly scooped up off the pancakes. I hate, hate, hate butter. I don’t mind it when cooking with it, but for some reason I can’t stand the taste of butter on potatoes, toast, bagels, corn…ick! I’d much rather eat all those things plain. Ok, back to pancakes. I ate the portion where the fork is. The other missing slice is some that I shared. I had some bites from Steph’s delish pumpkin pancake too!


Look at those leftovers! Breakfast tomorrow maybe?


The walk back home was quick but good for digestion 🙂 A little bit later, I had some grapes to get a lil fruit into the day!


The kitten babies wanted to eat them too…luckily I shooed them off right before they took a bite! Those guys will try to eat anything, its weird. I thought that was a dog thing??


Now I am going out to enjoy this sunny “summer” day in January! Ahh how I love you California. Check out the view from my bedroom 🙂
