I finished off the last of the PB Puffins in my yogurt mess today. Why are these so darn addictive??

CIMG5713

For lunch today, I made a turkey wrap on a La Tortilla Factory tortilla with some TJ tomato & basil hummus and red cabbage. A somewhat strange but very filling combo! Paired with a mango and a few pieces of fruit from the office spread, this meal held me over almost until the end of the day.

CIMG5714

CIMG5715

Right before leaving for the day, I dug into my cinnapple from yesterday. You know how people suggest adding lemon to keep a cut apple fresh? It seems like cinnamon does the same thing! I diced this apple Tuesday early morning and ate it Wednesday afternoon and it was still crisp and not browned at all.

CIMG5716

After work I decided to go for a hike instead of going to the gym. The sun was FINALLY out, even though it wasn’t hot. The cool air is much better for the hike though! I did a light jog on the way back down the canyon…makes the trip downhill so fast :)

Dinner was inspired by Julia’s new plates. Aren’t these cute??

CIMG5722

I went Italian-style with a serving of TJ breaded eggplant topped with sauce and a little light cheese & a side of shirataki noodles with sauce, mushrooms, red onion and basil. The eggplant was SO GOOD as usual.  Pasta probably would have tasted better; I only really like these noodles in stir fry I think. But it left lots of room for dessert!

CIMG5747

Cookies & cream Skinny Cow while watching True Blood. Perfect combo!

CIMG5727

Three Things for Wednesday

  1. Brought chips to eat with lunch but skipped them
  2. Tacked on an extra bit to my hike
  3. Made shirataki noodles instead of pasta for dinner

Earlier I was talking to my girl over at What Do I Eat Now? about temptation at the office. I realized that today we were stocked with muffins, brownies, fruit, cheese & crackers, jellybeans, chocolate, tootsie rolls, laffy taffy, runts, swedish fish and sour patch kids. That kind of spread is pretty typical! For the most part, I just avoid it all because once I start, it can be hard to stop! Does anyone else have lots of food temptations at work? How do you keep from just snacking all day long?

And the work week starts again! At least this is a short one for me :)

This morning, I settled down with my yogurt mess.  I missed these over the weekend!

CIMG4903

The first half of the day went by pretty fast with the usual Monday meeting.  For lunch, I finally ate my leftovers from Thursday night.  I really wasn’t feeling this meal, but I didn’t want to waste food or money so I ate it anyway and it was good of course.  Enough to fill me up and that’s what I really need!

CIMG4904

After lunch I went to the doctor. Ugh, I hate doctor appointments. When I was younger, my mom used to pull me aside and tell me to stop giving the death stare to the doctor, and I never even realized I was doing it!  It went fine but I left feeling really antsy.  So on the way back to the office, I stopped for a little cup of froyo with sprinkles.  Self medication at its finest!

CIMG4908

The rest of the day passed by pretty quickly. I came home and did Shred Level 3.  My mom and I have been doing the shred On Demand, and according to the schedule, only Level 2 will be playing through June, so we might have to jump around a bit. WOAH! I didn’t sweat that much more than Level 1 but it was WAY harder, especially on my arms. I was a little shaky afterwards so I grabbed this carrot on the way back out the door.

CIMG4909

Then I walked to Target and Whole Foods for some quick errands. I picked up some tempeh at WF that I am really excited to try! I’m guessing I will need to research some good recipes. Let me know if you have any :)

When I got home, Kate came over, dinner in hand! Look at this gourmet meal she made…FANCY, right?!  I ate most of the polenta/spinach mixture on the bottom, all of the scallops, and just a few bites of the bacon.  Thanks Kate, you domestic goddesss, you rock!!

CIMG4912

We ate and watched Gossip Girl. Ummm, lamest episode ever, right?? I can’t believe Nate & Blair got together and broke up in like 4 episodes. Why are they rushing all the good stuff?!?!  ANYWAY now I am getting into bed with a book and a little piece from my chocolate Easter bunny. Night!!

CIMG4914

Three Things for Monday

  1. Ate my leftovers for lunch instead of going out for food
  2. Walked to do my errands
  3. Ate 1/2 a piece of bacon from the 4 that were on my dinner plate

Hi everyone, hope you all had an awesome weekend!  Sorry I have been MIA…I hate not being able to post but my computer was SO SLOW yesterday and every word took five minutes to type!! Why?!?  Anyway, I’m here now!! Okay, backtrack. Friday morning I woke up a little early and shredded before work.  It was great getting it out of the way and then I didn’t have to worry about it, which was nice. I kicked off the morning with the usual. So many good fruits, finally!

CIMG4822

I was planning to eat the rest of my stir fry from Thursday for lunch, but at noon my boss paged the whole office on our phone intercoms and asked who wanted to go out! YAY! He hates leaving the office with no one there and sending calls to voicemail, but we did it anyway and all went to lunch — at Bloomies.  Only my boss decides to eat at a department store! And yes, it was all sweet old ladies there, and us HAHA.  I had a little piece of bread when we first sat down and then proceeded to order an amazing sandwich that had grilled chicken, avocado, cranberries, figs and some other good things that I am clearly forgetting in a sun-dried tomato wrap. AHH it was great! I also got some fries on the side, which I promptly split in half and gave the rest to our just-announced preggers VP.  She is so tiny and healthy and has just started ordering a grilled cheese every afternoon. I love it.  Sometimes work drives me crazy, but the people I work with are pretty darn cool. We had such a good time at lunch together…all of us talking at once and sharing food off each others plates.  It’s cute!

After a fun lunch, the rest of the afternoon went pretty quickly.  I got home and decided to take advantage of the nice weather with my good friend, 2 buck chuck.  Isn’t he sweet??

CIMG4823

I had a nice glass outside with a pre-dinner snack, yogurt mess!!!! I made this one slightly smaller than usual just to tide me over to our late dinner. I can’t drink wine and then not eat til 10 PM, just doesn’t happen!!! I think I might turn into this yummy creation, I eat it that much…

CIMG4826

Julia and I got all gussied up & as soon as her friend Jen headed over to our place, of course I couldn’t find my wallet.  I looked EVERYWHERE and then drove all the way back to my office…still no wallet. 40 minutes later, I got home and remembered I put it in my gym bag. DUH!!!!!!!! We hollered for a taxi and headed out to Yatai, our fave Asian tapas place.

We started with some cold bamboo sake and beers, but I ended up passing along the sake and drinking most of this Ginger beer and most of the Berry beer we ordered.  Flavored beer rocks!!

CIMG4829

For dinner, Julia and I split a bunch of the dishes we order every time, including the best CA roll in all existance.

CIMG4831

And some insanely delicious crispy rice with spicy tuna.

CIMG4838

Plus a newcomer to the usual rotation, tempura pumpkin with curry salt. OMFG.

CIMG4839

Last but absolutely definitely not least, popcorn shrimp. I wish I could share a bite of this with everyone!!

CIMG4840

After our amazing meal, we headed back down to Santa Monica Blvd and Bar Lubitsch, which is luckily right by our apt and an easy walk home at the end of the night.  Julia, Jen & I enjoyed a few free shots with Jen’s friends and some dancing.  Jules and I ended the night with some extra-flirty action on our parts. I may have gotten a text at 3 AM about my great looking ass, but of course, that was just factual reporting. Obviously. Julia & I smartly stayed awake chatting for a while after we got home, and I made us La Tortillas toasted with a bit of Chocolate Dreams. Perfect for sweet dreams to follow!

CIMG4835

Three Things for Friday

  1. Shared my fries at lunch
  2. Ordered my wrap without cheese or dressing
  3. Split all my dinner plates with Julia

We woke up Saturday morning needing BREAKFAST stat. I actually slept until 9, which is possibly the latest I’ve slept in years. We headed out to Venice to check out Flake, a really cute cereal restaurant.

CIMG4868

While you can order eggs & such, the star of Flake is the huge list of cereals and toppings!!  I got a bowl with one scoop frosted mini wheats, one scoop raisin bran, topped with bananas and blueberries and served with skim milk.  This place is perfect for when you are craving some cereal but don’t necessarily want to go out and get a whole box of just one kind. And it surprisinly held me over for a really long time!

CIMG4865

All mixed up!!!!!

CIMG4866

Plus a really frothy non-fat chai latte on the side.

CIMG4867

Here’s where I become a bad food blogger, no pictures of the rest of Saturday, sorry!!! So after breakfast, I headed down to Laguna Beach for Becky’s big going-away party.  I got to the beach at that awkward time when it’s too late for lunch but eating a big meal would spoil my dinner. Luckily, I had a Nature’s Valley bar in my beach bag, probably from last summer. Whatever, it did the trick! It wasn’t hot at the beach, but we played some bocce ball and the sun came out around 4, so we got a few rays!

Back at the house, we raided Becky’s closet filled with lots of things she can’t take to NYC (I scored tons of cute clothes and a pair of Gucci heels that are a wee bit too big but I’m determined to make fit anyway!!) and drank the house Cosmo Lights while doing our fashion show.  A ton more people showed up, including Becky’s friends from high school and friends of the family.  Her dad made an awesome taco bar with tortillas, chicken, rice & beans, homemade guacamole, pico de gallo, salsa & cheese.  I had two tortillas plus a few handfuls of chips with the killer guac. He made a HUGE container, which the party devoured in no time!!!  The food fest was followed by many games of beer pong in the front yard. I promise I will take pictures of the next Laguna weekend to share with y’all!!!!  We also made Becky cry when we gave her the scrapbook made secretly during the party, where everyone made a page with photos and notes, like a way-cooler yearbook.  I am going to miss her so much!!!

Julia came down when she got off work, carrying a big bag of muffins from her restaurant. Perfect to fill our bellies before bed :) Sunday morning, I woke up and settled down in the living room with another half muffin (strawberry, MMM) and Twilight #3.  Julia woke up a little bit later and we snuck out of the house for a bit to pick up coffees and flowers for Kate & Becky’s mom.  I called my mom too and she got my package and loved it!  I was sad that I couldn’t be there with her to make her breakfast in bed and spend the day together but I talked to her at least 5 times so it felt like I was there a little bit :)

CIMG4870

When J & I got back to the Laguna house from our errands, everyone else was awake and Becky was whipping up a huge breakfast for her parents and the little group of us that spent the night.  The spread included a gorgeous Mexican frittata…

CIMG4875

…lots of bagels…

CIMG4876

…and tons of toppings, like smoked salmon, cream cheese, tomatoes, onions, avocado, and capers!!

CIMG4879

CIMG4872

My brain was bigger than my belly, and I topped two big bagel halves and cut a little slice of frittata.  I ate one of the bagel sandwiches and most of the frittata.  It was amazing!

CIMG4880

After our big meal, we all just laid around and read books for a bit, waiting for the sun to come out.  When it looked like the clouds were sticking around for the rest of the day, we all gave Becky big kisses and headed back to LA.  I brought along the other half of my bagel, which made for a perfect late lunch when I got back to the city.

CIMG4883

The rest of the day was spent cleaning my room, doing laundry, attempting to blog, and finishing off Twilight #3 in between.  Throughout the rest of the day, I sporadically snacked on a few different things, including strawberries,

CIMG4890

5 leftover TJ multigrain & flaxseed crackers with hummus,

CIMG4891

salad with baked tofu,

CIMG4893

some shirataki tofu noodles mixed with 1/4 cup tomato sauce, basil, S & P,

CIMG4895

and the final scoop of TJ organic soy-creamy non-ice cream ice cream.

CIMG4902

Man, I love the weekend!  Sunday nights are always so relaxing and bittersweet at the same time, you know??  This week is looking pretty busy because I have a lot to get done before leaving Thursday night for Boston to see my Rachiekins! Hope you are all having a good Monday, can’t wait to catch up on your fun lives :)

Three Things for Saturday

  1. Skipped the Lucky Charms & Cinnamon Toast Crunch @ Flake
  2. Ate a light snack between breakfast and dinner so I wouldn’t fill up
  3. Cut my Cosmo in half with soda water

Three Things for Sunday

  1. Saved half of my breakfast for lunch
  2. Made salad & shirataki instead of continuing to snack
  3. Ate a healthy dessert portion (you can’t tell from the picture, but I just had one scoop and then closed down the kitchen!)

Yesterday was such a busy day at work! We had meeting after meeting after meeting. Hmm yup, three meetings!! I managed to eat some low-sugar apple cinnamon instant oatmeal with a banana nuked in there after meeting #1. Fluffiness!! I am OUT of frozen fruit and fresh fruit and probably won’t get to the store until Thursday night. HORRORS!!! No yo-mess until then :(

cimg4768

You all pretty excited to check out my lunch, huh?? Well I ate this puppy after running to the store for one more thing for my mom and about 5 minutes before another meeting. This is the other half of the chicken from Tuesday. Look at how paper thin it is!!! I also had a bunch of raw broccoli on the side, this serving times 5 maybe? I love raw veggies but right then my stomach was thinking HMMM…

cimg4770

I skipped the veggie pasta because there wasn’t enough time! Instead, I snacked on some trail mix a little later. There were a couple almonds in this fuzzy handful that got picked out before I snapped a pic :)

cimg4773

I also had a blueberry z-bar. I think this might have been the first time I tried this flavor and I loved it! So much more than honey graham or chocolate brownie.

cimg4776

After trying to finish up a few things once the clients peaced out, I headed over to Steph’s house for Twilight time!!  She has been wanting me to see this movie FOREVER and our opposite schedules have been making that impossible.  Anyway, she got me reading the books a few weeks back and that’s when I knew I had to make this movie date happen!  I needed to see all that deadly luurve firsthand :)

I settled down with a small glass of red.

CIMG4788

Steph made some lovely whole wheat crust pizzas.  We did one with tomato sauce, very light cheese and spinach & another with pesto, cheese and sliced tomatoes. I had a piece of each!

CIMG4792

We also had side salads of broccoli slaw and shredded cabbage topped with balsamic vin. Aren’t these black & white bowls cute??

CIMG4777

The movie was good! We couldn’t stop talking about how the clothes were seriously wack. Can’t vampires wear better threads?!? Also, makeup job was not so hot.  But I loved the awkwardness between Bella & Edward, high school hotness!! Steph whipped up a batch of chocolate chip cookies for post-movie consumption.  I had two of these little delights. Love hot dessert!

CIMG4793

Then Steph, her boyfriend Josh and I took a run down memory lane and discussed psycho exes. Josh & I were battling stories, but I like to think that I clearly won.  It was so good seeing my girlie!  Photo OPP!!!

CIMG4786

So I got home a little after 11 and found out that you CAN do the shred that late at night! I did half but then got sidetracked by some roommate bonding, which is always #1!! I ended up continuing the cookie streak by eating THREE of these cookies. They are so good and will be marching out of our place tomorrow so I don’t eat them all!

cimg4767

Today I woke up right with my alarm and instead of hitting snooze, I finished the last half of the shred. Woop woop! At the office, I made a v. pathetic yogurt mess. It’s all one color! I just had bananas and figs for this one.

CIMG4794

Luckily lunch was much more colorful! I tried to hold off on eating but was tummy-growling hungry and dug in right before noon.  I ate my leftover chicken fajitas with some 100-cal pack guac and two tortillas.  I snagged one tortilla from the restaurant (prob uber unhealthy) and one from my pack of La Tortilla Factory (very healthy!!!).  Everyone in my office couldn’t stop saying how delicious my food smelled and I had to agree!

CIMG4799

After eating, I strolled over to the Farmer’s Market and picked up an eggplant, string beans, green onions, radishes, 3 packs of strawberries, carrots, and cherries for $12. Love the Farmer’s Market! I dug into some of the strawberries and cherries.  My breakfast is gonna be bangin tomorrow with this fruit!!

CIMG4801

A little later, I had my favorite Cherry Pie Larabar for some pre-workout fuel.

CIMG4802

Yes! I finally made it to the gym for 30 minutes on the elliptical AND did the shred when I got home. YAY! Tonight for dinner, I made an awesome stir fry using some of the stuff I got from the Farmer’s Market, plus tofu and shirataki noodles. BOMB! Julia came home planning to make a stir fry too so I got to steal some of her delicious sweet chili sauce, which worked perfectly drizzled on top!

CIMG4804

It’s HOT in LA right now. People deal with heat by eating an ice pop.

CIMG4820

Cats deal with heat by chillaxin in the bathroom sink!

CIMG4809

HAPPY FRIDAY!

Oops, almost forgot. My computer is going sooooooo slowly right now! Okay…

Three Things for Wednesday

  1. Skipped the pasta at lunch
  2. Poured a smaller glass of wine
  3. Ate two slices of pizza instead of the three I could have easily finished!

Three Things for Thursday

  1. Only packed one of the restaurant tortillas to eat with lunch
  2. Ate half the guacamole on my plate
  3. Saved half of my stir fry for another meal

Today the second BB packet made its way into my oatmeal! I had to try Barney Butter with oats, right?? I made this bowl with a pack of low-sugar apple cinnamon instant oatmeal, half a banana and the AB half stirred in, half on the side for dipping. Delish!

cimg4424

At lunch, I went on a shopping mission to find a bday present for my sister. No luck! By the time I finished I was RAVENOUS so I went with the one thing I was craving — a burrito! Not just any burrito, but the Nature’s Grill from Poquito Mas.  This one has grilled eggplant, mushroom, zucchini, red & green bell pepper, red & white onion, and black beans.  Seriously, how good does this burrito look?!

cimg4426

I also had some freshly baked chips with pico de galo.

cimg4427

Luckily there were a few more chips in the bag to munch on, since I decided to stay late at work so I wouldn’t have anything hanging over my head this weekend.  The burrito and extra chippies held me over until I got home around 7:30. I skipped the gym in favor of the office, so I did Shred Level 1 right after walking in the door! I’m so glad I found this workout. Day 2 was definitely harder on my muscles.

Afterward, I whipped up a new Shirataki creation.  Tonight I tried the angel hair pasta style for the first time. I topped it with some cooked grape tomatoes and rosemary. AH-MAZING!! I need an endless supply of this stuff.

cimg4428

I also had some frozen peas to munch while watching The Office.

cimg4429

Now I am just watching some more TV before bed…maybe by 11 tonight?! Crazy :)

Sorry to be missing in action! I had a super late night last night and just couldn’t muster the energy to post at 1 am LOL. So here’s what I’ve been up to…Tuesday breakfast was a yogurt mess, of course.

cimg4395

I switched up my lunch from the turkey avocado and had a lovely shirataki meal that I quickly nuked up in the micro Monday night. I used these tofu noodles, frozen broccoli & cauliflower, chicken and soy sauce. Shirataki, I’m in love!

cimg4398

I brought a little bit of Easter into the office with some chocolates. I’m seriously obsessed with the Reese’s eggs.

cimg4397

I also had an apple late afternoon. I wish I had a good knife at the office so I could have cut this up, but ah well, just ate it old-school style.

cimg4399

No gym for me last night! Instead, I met my friend Jorge at Birds for dinner, where I got rotisserie chicken, roasted potatoes and steamed veggies with a side of BBQ sauce and a piece of lavash. The chicken was really great and totally hit the spot.

cimg4402

Our plan for after dinner was to hit up a comedy show next door to the restaurant, but our timing was totally off and we had a little bit of a wait, so we hopped over to the coffee shop on the other side of the restaurant (love when everything is close together!!). I got a single Americano and had to take a few pictures because of the awesome lighting. Aren’t these cool shots?!

cimg4404

cimg4406

After coffee, we went to see The Birthday Boys perform some sketch comedy. One of my friends is in the group so it’s fun to catch the shows when I can! They are crazy funny. They kicked off the night for a whole slew of other comedians, including Sarah Silverman and some of the cast from her show. The laughs lasted until midnight, where I still somehow found room for more Easter candy before getting into bed…

cimg4415

Today I had another messy yogurt (hahaha I just get sick of saying yogurt mess so I gotta switch it up sometimes, you know?!). I finished off my mangolicious blend, boo! This one was chock full of goodies.

cimg4407

Today I got my second spa treatment for work!! Ahhh, I could so get used to these. This one was TWO hours and so amazing. First, I got slathered in different kinds of clay, wrapped in plastic, and covered in hot blankets. This process softens skin while helping the body sweat out and release toxins. Then came a soak in a hot tub for one, complete with jets and water that you can control yourself. Of course I helped myself to two Clementines and some spa water (you know, with the water and lemons in it) that were sitting next to the tub to help replenish before the …50 minute full body massage. Yes, I know, I am so insanely spoiled sometimes!

After finish up my “work” for the client, I stopped by Panera to refuel before heading back to the office. Sadly, today isn’t black bean soup day AND they were out of french baguette, my favorite thing on the menu!! But the garden veggie soup, whole grain baguette, and Mediterranean veggie sandwich (minus feta of course) were extra delicious. The hummus totally made the sandwich.

cimg4408

The rest of the day flew by (maybe the best day in the office ever!!). I had a nice crunchy apple that I grabbed at the spa while driving over to the gym. I did the usual 60 minutes on the elliptical. I feel like I’ve had to push myself hard to get through an hour of cardio lately, wonder why…

cimg4410

After the gym, I came home to discover two packets of Barney Butter in my mailbox! Of course, one of these immediately jumped onto half a banana and an ak-mak cracker. The taste surprised me at first. I have to admit, I was expecting it to taste nuttier, if that makes any sense. But I LOVED the “stick to the roof of your mouth” factor that I haven’t really found with any other brand. Totally reminded me of eating PB as a kid!!

cimg4412

I also had a cup of Kashi Honey Sunshine with the other half of the banana, plus 1% milk.

cimg4413

Of course I was doing so well today and then I had to go and have a whole bunch of Easter candy (while watching TBL, how bad is that?!). No pictures because I definitely just ate it straight out of the bag. All the candy motivated me to check out On Demand and sure enough, I have Jillian’s 30 Day Shred, Levels 1 & 2 available, so I checked out level 1 and had Jillybean shred me up!!!

I can definitely see why everyone is seeing arms & ab results. Not sure if I am ready to do it every single night but this will definitely be making it’s way into my rotation, especially any & every day I don’t go to the gym for an hour of cardio.

So about the title of my post, when I was driving home from work today, I was just thinking about how far I’ve come and how lucky I feel. When I first moved to LA I had no clue what I was doing, I just knew I wanted to try. Kaneil over at Balance is Best recently wrote something about not letting the fear of failure GET IN THE WAY. This whole concept really speaks to me…I mean, I was TERRIFIED of moving to CA (literally, my mom had to pull over on the drive to the airport so I could puke even though my boyfriend was living here so I wasn’t totally on my own). But I did it anyway, and now my day-to-day life consists of checking out Sarah Silverman in comedy shows and getting spa treatments so I can write about them for work. I just feel so blessed sometimes, which is such a better feeling to focus on rather than the stress and weightiness of every issue that I sometimes feel. It makes me happy to know that I have the power and determination to go out and do things when I put my mind to it.

I feel lucky to have this new passion for the blog as well, and thank all of you for making that true every day!! Ah, cue sappy music :)

Happy almost Thursday everyone!

My stupid computer just lost my whole post! UGH!! Okay, here it goes again…Tuesday morning, I had a very All-American breakfast — red, white and blue — with blueberries, strawberries, half banana and lemon yogurt. Okay, maybe more like red, yellow and blue! Plus half cup kashi. This yogurt mess is one of my favorites.

cimg4167

For lunch I started with a nice big salad topped with light balsamic vin dressing. I used to eat big salads like this one to fill me up all the time. I need to get back to doing that! Although it’s more out of laziness when I am making lunch the night before than not wanting to eat them LOL.

cimg4168

I also had two slices of Oroweat Light bread with Better N Peanut Butter. This bread is great for sandwiches! The slices are a bit smaller than normal, but that’s because the bread is only 80 calories for both pieces. I loving using this brand when bread is not the focus of the meal. For example, give me a good doughy piece of french bread for soup dipping any day! But when I am making a sandwich, I love that the bread can be so low-cal and the fillings can be most important. I’m still iffy about the PB. It’s not like my usual natural butters, but again, at 100 calories for 2 tbsp, it’s not a bad alternative. My banana was sort of messed up on the bottom half, so only one slice got graced with nanner slices.

cimg4169

After lunch, I said buh-bye to some cottage cheese! Nope, not the food, but those dimples on the backs of my thighs! One of my clients has a spa as part of the company’s business. Since I am always writing up about the different procedures and products, they are basically “forcing” me to come in and get some treatments. Yes please!! Yesterday I got an anti-cellulite treatment, which basically included an intense chopping Russian-style massage and a rolling French-style massage on the backs of my thighs and bottom of my booty. Complete with cucumber water and a fluffy white robe of course! Sometimes I love my job :)

I got back to work relaxed and refreshed with only an hour left in the day! I was going to forgo my snack but didn’t want to lose stamina during my workout so I heated up a bowl of instant low-sugar apple cinnamon oatmeal.

cimg4170

I really wasn’t feeling the gym yesterday, especially since I was book-less and magazine-less. Some of you have asked how I get through 60 minutes on the elliptical without getting bored. Reading is the key for me! The TVs at my gym stink, so I always try to have a book or mag to help make the hour fly. Without them, I decided to detour and hike Runyon Canyon, which is pretty close to the gym anyway. Check out the signs posted at all the entrances!

cimg4176

Whew! The hike kicked my butt! I went up the steep side of the hill and pushed myself hard so I could really feel my heart pounding. One of my favorite things about hiking is that you get the tough stuff out of the way first, and then once you reach the top, it’s all smooth sailing from there! Here are some pics of LA from the top. Yes, I dragged my camera along this once for posterity. Look at that pretty blue (ehh smoggy) sky :)

cimg4173

cimg4174

And a shot of the trails I took back down!

cimg4175

This was a fun workout! Now that it’s sunnier later, I’m sure there will be many more hikes in my future. For dinner, I decided to make a stir-fry with some Shirataki noodles. Maybe I am the last person learning about them, but my roommate Julia turned me on to these AWESOME noodles made of tofu! This ENTIRE package is only 40 calories.

cimg4177

I was going to do a stir-fry with chicken, but since it was $6.99 per pound at the grocery store, I went all veggie instead. First I sauteed some fresh broccoli, radishes, baby bella mushrooms and green onions in 1 tsp toasted sesame oil & 1 tsp light soy sauce. Then I washed, drained, heated (1 minute micro) and dried the Shirataki noodles before adding them, plus another tsp sesame seed oil and soy sauce to the pan. So delicious!

cimg4180

These noodles worked perfectly for this type of dish. They don’t taste exactly like pasta, but since many Asian dishes are made with Udon, or Soba, or glass noodles anyway, I didn’t really notice that I wasn’t eating “pasta.” They also took on a lot of the other flavors from the stir-fry. I am definitely adding Shirataki to the regular rotation!

I tried catching up on TBL, but I couldn’t even finish last week’s episode, I was too tired! I was itching for some cereal again as I curled up in bed, so I snuggled up with a book, some tea, and half cup oaty o’s & 2 sliced strawberries in some milk.

cimg4183

Happy April Fools & Hump Day everyone!!
