Staying up late watching True Blood on Saturday left me exhausted I guess because I slept until 10:30 AM on Sunday!!! People, this is a major accomplishment and basically unheard of…usually I wake up by 8:30 on the weekends and consider that an extra two hours, so 10:30 was great. Guess I needed it! I decided to whip up some pancakes again just because it was the weekend and I could! I used 1/2 cup of the whole wheat mixture and added in 1/4 cup of those baby Maine blueberries from Trader Joe’s.  Topped with 1/2 banana and 1 tbsp vanilla bean maple syrup, these were delicious! (Still think I liked Saturday’s chocolate pancakes best though!!)

I basically did nothing Sunday and was insanely lazy. I always have a huge list of things to get done over the weekend but I am so busy during the week that my body and mind just craves relaxation! The kittens and I cuddled on the couch and watched more True Blood.

I decided to use some homemade whole wheat pizza dough to make my late lunch. I rolled the dough out pretty thin and topped it with tomato sauce, light cheese, zucchini, mushrooms, green peppers, vidalia onion and fresh basil. It was really delicious!

I also got into some unnecessary snacks…an un-pictured Skinny Cow and some Puffins. We are definitely breaking up again when I am through with this box. Willpower = out the window!! Meanwhile, the kitten babies moved on from me and snuggled together. How cute are they??

Courtney came over for dinner and to watch He’s Just Not That Into You with me and Jules. I took over in the kitchen and made whole wheat pasta with tomato sauce and fresh basil, chile lime chicken burgers and roasted eggplant and zucchini to eat while watching the movie. This meal was so quick and easy to make and tasted great!

I thought the movie was really cute and fun. I am such a sucker for any chick flick basically. Court brought over cocoa meringues and brownie bites from Whole Foods for dessert. The meringues were good but the brownie bites were amazing! Between the three of us, we ate almost the whole container. Too bad I didn’t check until AFTER eating them that the brownies are almost 100 calories each!!!!! No wonder my belly was stuffed beyond belief by the end of the movie.

Lunch was somewhat boring but good, just a bowl of Progresso minestrone soup. I didn’t have anything packed when I was running out the door, but am glad that I grabbed this so I didn’t have to spend money or calories on ordering food.

Instead, I got the same sweet treat as Friday, my favorite no-sugar added light half mocha half vanilla ice blended from the Bean. MMM!

After work, I got an early start on dinner with a Newsroom 9 Grain bread heel topped with a schmear of Better N’ Peanut Butter and some cherry jelly. I was just too hungry to wait!

Even though the toast kept me full for another hour or so, I was still craving CARBS and debated mashed potatoes and pancakes but decided on continuing the breakfast theme with an omelet. I used 1/2 cup egg beaters, vidalia onion, basil and mushrooms, with red pepper slices on the side. The breakfast theme let me have another bread heel with jelly on the side :)

Then Julia and I headed out to a BBQ restaurant to meet some guys from her work for a drink.  I had a glass of Pinot while we chatted away. Knowing the bartender meant we got a nice free top off! I avoided eating any of the fries, but did steal Julia’s pickle! It was nice getting out and having some entertaining convo after a long day at the office. Jules is leaving tomorrow for MN and I just wanted to soak up my Julia time!!! I am going to miss her!!!

Long story, but around 11 PM we headed to Santa Monica to scope out parking spaces for Julia to leave her car for the week. We just walked back in the door (it’s 12:30 now) and I can tell that my blood sugar has seriously hit rock bottom because I am being a total crank yanker and am about to make a bowl of instant oatmeal. Instead of taking/uploading a boring picture of that, I leave you with this…

Thanks for all your great feedback on the event Saturday!! The rest of the weekend was very relaxing. I tried to sleep late but was up early anyway, so I relaxed for a bit with a cup of coffee.

Then I started getting a rumbly tummy, so I made the usual.

After getting ready for the day, I made a pit stop at Best Buy to drop off my camera. All the rest of my photos will be from the old camera I resurrected from a drawer in my bedroom. So glad that I am a pack rat!  I have the special charger for the batteries (yup, old school batteries) and the USB cable, whew!  After leaving my camera in the capable (hopefully!) hands of the Geek Squad, I hopped on the highway and headed down to Laguna Beach. I don’t have any pictures from Sunday because the camera batteries were charging at home, but believe me, it was an amazing day!

We are having a heat wave in CA and it was 95 degrees so of course we had to do a big beach trip. Laguna isn’t the closest beach by far, but Becky & Kate J (they are sisters, in case you were wondering!) hail from Laguna and their parents still live down there, making it the perfect place for beaching and having a big, family-style BBQ/beer pong/piano-playing food fest afterward.  On the way down to the beach, I got caught in some traffic but snacked on some strawberries that I so ingeniously thought to pack. For lunch, Becky and I traded halves of two delicious sandwiches — smoked salmon with cream cheese and grilled veggie with hummus & olive tapanade. MMM! Later I snuck 4 Sun Chips to crunch while reading Book Numero 2 in the Twilight series. Yup, 4…I am v. impressed by the brief appearance of my willpower!!

Back at the house, Chef Becky got cooking for the group…there were maybe 15 of us all together? We snacked on bread and cheese while everything was being marinated, mixed, boiled & baked.  The boys grilled chicken and turkey sausage, and I helped BeckO make a dreamy potato salad that was just red potatoes, balsamic vinegar, S&P, green onions, dill, cilantro & basil. It was delicious! She also cooked some beans and I made two chocolate cakes topped with some of Becky’s homemade icing.  Oh!! She also made the house drink, Cosmos, to go with our Coronas. It was a great night! I ate a little bit of everything we made, but was actually kind of full from the sun and the taste testing bites I took while cooking, so I didn’t over indulge in anything except maybe the bread when we first got home.

The weather stayed gorgeous all night, so of course none of us wanted to leave! I finally headed out around 11 PM and it was STILL hot enough to be outside in just our bathing suits and sundress cover ups…crazy!!

Three Things for Sunday

  1. Snacking on 4 Sun Chips instead of mindlessly munching from the bag
  2. Enjoying my Cosmo from a short glass, instead of a tall one
  3. Eating a few bites of chocolate cake instead of a big slice

Yesterday I was SO excited to be back at work of course. Kicked off the day with the usual good start!

I was too tired last night to think about food, so I just swung by the grocery store and picked up a Lean Cuisine and some of those Green Giant Immunity Blend veggies.

By the end of the day, I basically felt like crud and just wanted to get home as fast as possible. I had every good intention of making myself some soup and buying some fresh Vitamin-C packed veggies to juice for a refreshing, throat-soothing pick-me-up, but by the time I got back to the apartment, I realized that my plan actually required having some energy in the first place, so I just raided the fridge instead. I started with this cool, soothing bowl of fruit.

I was still sort of stuck on the idea of soup, but the 100 million degree heat in my apt changed my mind. Instead I made a super fast cold Mexican salad with lettuce blend, cheddar cheese, 1/2 cup cold black & kidney beans mixed, one 100 calorie Wholly Guacamole pack, and some salsa. On the side, I had a La Tortilla Factory tortilla spread with some of the guac.  I ate this outside becuase it was cooler out there than it was in my place!!

I finished off dinner with a freezer-burned mango popsicle from Trader Joe’s. All I wanted was something cool and soothing! I love these TJ popsicles, especially the Caribbean ones!

Three Things for Monday

  1. Going to the grocery store to get a Lean Cuisine & veggies instead of picking up food or ordering in
  2. Skipping the office latte run
  3. Eating a popsicle to soothe my throat instead of running out for some ice cream (which I seriously debated…being sick/tired won out!!)

Today I am feeling better but not awesome. I made the usual for breakfast. I am out of frozen fruit and almost done with my box of Kashi, oh no! I might have to make a grocery run today…

For lunch, I finally got my soup! I had a bowl of Progresso Minestrone with a serving of ak-mak crackers on the side. Yum, it is much cooler in my office since we actually have AC here!!

I have also been guzzling Emergen-C all day, so hopefully this stuff works its magic :)

After lunch, we celebrated an office birthday with some ice cream cake. In my office, we all sing and then eat the cake together and chat, sort of a little break/bonding. I tried to be good by asking for a smaller slice. Some cake I could turn down completely, but not a chocolate peanut butter ice cream one! Ice cream cake is my absolute favorite. For some reason it did NOT sit well in my stomach though! I could feel my belly sloshing all over the place.

Once I got home, I decided to take a walk to Trader Joe’s to pick up some goodies for dinner. I am feeling better but not great, and this seemed like the best way to get some air and movement! Back home, I made a nice side salad with Catalina free dressing.

I cooked up some Italian, TJ style. First, eggplant cutlets. These are great! About 170 calories per serving and SO tasty.  I also made 1 cup dry whole wheat and vegetable pasta blend. Delish!

I also sipped on a bottle of Full Sail Pale Ale. I am not a big beer drinker, but for some reason, a cold beer sounded so amazing to me, and since you can get just one at TJ, I picked up this guy! I drank half with dinner.

For dessert, I grabbed some TJ Organic Soy Creamy Chocolate goodness. I wanted something cold but the freezer was seriously cleaned out!! Everyone must be thinking the same thing as me in all this heat. I had a few spoonfuls of this — pretty good!  I should have just put it in a bowl because my few bites definitely turned into at least a serving, oops.

Wow! I am all greened out!! Body Reset Day 3 started with a bowl of overnight oats. I made these with 1/2 cup rolled oats, 1 cup unsweetened almond milk, cinnamon & salt. I don’t know what I did wrong but I was NOT a fan. I basically had to force down this whole bowl!

I had some more coconut milk mid-morning. Today I tried a new brand — O.N.E., which stands for One Natural Experience. Another rockstar! I love this stuff. I wonder if they sell it anywhere in bulk?

Lunch was a salad identical to the one I had Sunday — 1/2 head butter lettuce, a little less than 1/2 avocado and a bunch of red onion, plus my homemade dressing.

After lunch I crunched on a handful of sunflower/pumpkin seeds.

Late afternoon I sipped this very green concoction I had juiced the night before. The drink contained basil, cucumber, lime, and a granny smith apple. I drank a little more than half…

…because dinner was even MORE greenery! Before eating, I did a nice half hour of yoga from On Demand Exercise TV.  Love that I can do that right in my living room!  I was sort of tired and not looking forward to anything intense, and this session was luckily a lot of nice spinal twists and downward dogs. Just what I needed!

We were planning on miso soup but decided to whip up a batch of pea soup instead. This one contained garlic, red onion, peas, a handful of lima beans, arugula, and basil. Again, SO easy to make! I think I liked the broccoli one best, but these two were pretty close in yummy taste.

We also made another juice, this one containing kale, celery, lemon, pear, and ginger. Here is a pic of the juice and the veggies all squeezed out!

I tried so hard to finish the juice but we really went overboard on the ginger and it was a little too spicy for me. I am overwhelmed just thinking of all this GREEN! Luckily we have SALMON planned for dinner tomorrow, YAY! I need a new color :)

Day 3 DOWN for the count!! 4 more to go :) I kind of can’t wait til Sunday when this is over. I am just so stubborn and determined to finish it out. I’m almost halfway there, right?!

Sunday night, the roommate and I made some of our food for the week so we wouldn’t have to do too much late night cooking. We made broccoli soup, miso soup broth and chicken w/marinade. That night we had the broccoli soup. We made enough to eat it again Monday night, so you will see the pics later in this post!

Day 2 kicked off with lots of water and herbal tea, followed by a smoothie breakfast.  This smoothie had blueberries, ice, vanilla whey protein, and unsweetened almond milk.  The ice really added volume and I ended up with TWO water bottles full!

Mid-morning, I had some coconut water from Vita Coco.  I was pleasantly surprised by this and really liked the taste. Coconut water (not to be confused with coconut milk) has a whole list of benefits, including 5 essential electrolytes (potassium, sodium, magnesium, calcium and phosphorous). I am planning to drink one of these every day for the rest of the week! The only problem is the price…$2 each for these guys!

Lunch was chicken and spinach.  Julia made a great teriyaki marinade without any sugar or soy.

Late afternoon snack was a serving of our kickass miso soup! All I had to do was add miso paste to our pre-made broth, heat, and eat.  I will definitely be eating this again this week.  Here’s the serving size:

Then I tossed in the watercress, which wilts into the soup when it’s hot. Actually, this was dryland cress, since Whole Foods was out of watercress. LOL I love those two names.

After work, I went to the gym to take a sauna. I did about 25 minutes to help sweat out some of the toxins and then went home. Tonight I might try for some yoga, but last night I just wasn’t feeling up to it. Dinner was a repeat of Sunday night’s soup! Seriously, this came out SO GOOD! Into the pot went broccoli, onion, garlic, S & P, arugula, basil, lemon, and 1 tbsp olive oil to sautee.

We added cilantro to the top for a tiny extra kick! I thought this soup turned out amazing and will definitely keep making it!
