Monday I had a great lunch at Clementine, but since I was with a coworker, I don’t have any pictures! I DID have an amazing sandwich that I can’t wait to eat again or try to replicate on my own: roasted sweet peppers with mashed chickpeas, organic heirloom tomatoes, salsa verde and arugula, served open-faced on toasted whole grain bread. Doesn’t that sound heavenly?! It was!

The day passed relatively quickly, and I made it to the gym for some interval action on the elliptical. I picked up dessert on my way back from the gym and didn’t even want dinner! I compromised by eating a yam first (hey, that’s a compromise in my mind!!) before digging into my Yogurtland.

Breakfast this morning was a yogurt mess, without too much fun fruit. I’m out of mango and strawberries sadly!

I got SO hungry around 11:30 and dug into a white nectarine. It was a little crunchy but I like it that way!

The fruit held me over a wee bit longer until I reached the “official” office lunchtime of noon. Today I had whole wheat pasta shells with veggies and corn on the cob that was leftover from Sunday night. It was delicious but a tiny bit awkward eating corn at my desk! I was trying so hard not to obnoxiously crunch :)

The day went sooooooooooo sloooooooooooooowly and I almost didn’t make it to the gym but convinced myself to go and ended up banging out a great hour on the elliptical. I had a super healthy meal in mind but a wicked craving for pizza that won over, so it’s a good thing I hit the gym! I whipped up my quick homemade dough, divided it into three, and used one piece to make a personal pizza.  I was in the mood for a few different tastes, so I ended up doing half tomato sauce/cheese/peppers/red onion/basil, one quarter cheese-less with peppers/red onion/hot pepper flakes, and one quarter acorn squash with pear. Yup, you read that right!!

Today I saw a great savory grilled cheese and pear sandwich featured on The Biggest Diabetic Loser that stuck in my mind all day! This sammie was my inspiration to make a sweet/savory section with squash and pear that tasted FABULOUS!!!

For whatever reason, pizza always prompts my sweet tooth, so I had a Skinny Cow fudge pop and a handful of M&Ms. Seriously good thing I made it to the gym, right?!

Since I’ve been getting so hungry by lunchtime, I tried holding off eating breakfast but that didn’t work. I dug into my yogurt mess by 8:30, oh well!

Lunch today was part of my “economy” efforts of the week — leftovers! Everything tasted just as good, especially once it was all mixed up. Best of all, it took such a long time to eat!

After lunch I took a little walk outside with one of my co-workers in the gorgeous sun. It was hard going back to work after that! Luckily I had a PB Fiber One bar in my purse…it was totally smushed but came in very handy around 4 PM when I got slammed with some more projects and realized I wouldn’t be leaving the office anytime soon!

I begged off around 7 and still made it over to the gym. I was itching to go home but the thought of portobellos and sweet potato fries (the store is next to the gym!) was enough to motivate me. I did a quick but sweaty 30 minutes on the elliptical. I NEED to get some new music!!

Dinner was an awesome plate chock full o’veggies and included a portobello mushroom, cheetahs, red onions, a dill pickle (times 2!), and fresh broccoli/cauliflower. Everything was delicious!

Tomorrow I have a last minute work breakfast at Shutters on the Beach, which is possibly the cutest hotel of all time and located in Santa Monica. Unfortunately, we aren’t going to be eating until 10 AM, so I am going to have to eat a small breakfast in addition to ordering at the restaurant. Here’s the menu; any ideas on what I should eat first/order later??

I can’t believe I leave tonight for my four day weekend! I’m so excited! Monday morning it felt weird getting back to the grind. I was tired and cranky and even my Tupperware of glorious messy yogurt couldn’t cheer me up.

After a somewhat stinky morning, I dug into a bowl of “leftovers.” Doesn’t look familiar? When I made my omelet Sunday night, I cooked extra eggplant, mushrooms and onions and put them to the side.  I also made a serving of pasta with my little 1/4 cup.  Plus the addition of an Amy’s veggie burger nuked at the office and voila! “Leftovers.” It was actually really good!

After a somewhat long and uneventful day, I headed home to eat an early dinner before meeting Courtney at the movies! Not in the mood for anything in particular, I started with 1/2 cup of salted edamame.

After dinner, Courtney and I met at the Grove to see My Sister’s Keeper. Thank goodness I brought us some tissues because I cried like a baby throughout the movie. I think my contacts were crusty with salt when we left. Gross, but true. Courtsie had never read the book before so I got to tell her about the real ending.  We both agreed that the screenplay probably worked better in this case because the book’s ending probably would have felt like WTF since they can only set up the plot so much in the limited amount of time!

After the movies, we chilled outside on the fountain and talked all about Court’s amazing trip to Italy, boys, acting, moving to Santa Monica, summer plans, and boys again.  It was so great catching up! My dinner/dessert left me pretty full the rest of the night, although I did snack on a few pieces of fresh pineapple when I got home.

Tuesday morning was yogurt. Again. My fun toppings are dwindling down but I don’t want to buy any more right before going out of town!

Around 11 AM I snacked on some more fruit. I’ve never bought a whole pineapple before — it tastes so fresh!

Since work was dragging, Julia suggested treating myself to something special to make the day more exciting. As soon as she said that, Poquito Mas came to mind! I got the usual Nature’s Grill Burrito with eggplant, black beans, zucchini, peppers, and onions — sans cheese or sour cream.  You don’t need it, I swear! I had these chips (plus another few handfuls) on the side. Then I was a good girl and gave the rest away to my fellow co-workers who were eyeing my meal with very jealous stares.

I finished off the day pretty strong and headed home.  I wanted to go for a run but just REALLY wasn’t in the mood. I convinced myself using the old “you won’t regret it” mentality and hit the streets.  I cut the run a little short (maybe 2.5 miles this time?) because every single step was torture. My calves are totally killing me today too. It’s crazy how some days it can feel so amazing and empowering to get outside and exercise and others it just drags! You know?

I got home feeling hungry but not quite ready to sit down to dinner. I hate eating before 7 PM if I can avoid it because I stay up so late and then there are too many hours between dinner and bedtime. Ding! Smoothie time! I worked at a Smoothie King in high school and pretty much considered myself the queen of smoothies. I even brought a blender to college so I could make them at a moment’s notice (everyone eyed me jealously that my mom let me bring a blender to make mixed drinks. Um, no, this baby is for my refreshing pineapple banana protein shakes people!!).  So I used half this 100 calorie protein drink, 1/2 banana and a whole lot of ice to make this pretty, frosty glass of deliciousness!

This smoothie turned out to be the PERFECT thing to hold me over until a later, 9 PM dinner, which means I had plenty of time to shower, clean, blog and do some errands before eating. Dinner was more pure randomness and an attempt to eat a lot of veggies.  I cooked some edamame and chicken but needed to bulk up the dish.  I ended up tossing eggplant, onions, red cabbage, pineapple salsa and chile paste into a pan and cooking it all up together til everything was warm and tender.  This was one of those meals where I had NO clue how it would all taste but I was v. happy with the results! Normally I would make some grains/carbs on the side but all the veggies & protein & spice left me stuffed!

Today I skipped the yogurt and had a slice of 9 grain Newsroom bread topped with Better N’ Peanut Butter and some cherry jelly.

This tasted really good but made me feel immediately sick to my stomach which was weird. Luckily the feeling went away in an hour or so and I was good to go! I had a snack around noon — just some of the delicious pineapple.

I took a little break to meet up with India for lunch.  She’s been filming in North Carolina and I haven’t seen her sweet face in weeks!! We hit up Century City’s awesome food court and I got my regular mayo-free tuna salad from Coral Tree. Repeat photo, original taste!

After lunch I was crazy busy trying to finish all my work for Thursday and Friday too.  It was rushed but SO worth it!! Now I am at home, sipping another smoothie and getting ready to pack. I think dinner will probably be a repeat of last night — I really enjoyed it!

My flight leaves at 11:40 PM and I get into NJ bright and early at 8 AM! I am beyond excited to be home and to see my family.  I will try to recap a bit while I’m there if I can but I’m hoping to be so busy that I hardly have the chance :)

I had one more last minute thing to finish for the client whose project I’ve been working on the last week, so the day flew by pretty quickly.  I didn’t even have a minute to leave for lunch! But I did manage to squeeze in some fruit and a Lean Cuisine.

I was working down to the wire since we were leaving early but at 3 PM my boss told me send the last email and PEACE OUT.  Love that. I came home and settled down with one of my girly books (Jemima J, always re-read this one!) and some TJ pita chips. Reduced guilt? Sea salt? Sign me up!

After the snacking, I decided to go for a little run.  I haven’t been in the mood to exercise lately but I think a lot of that is because it’s late and I am tired by the time I get home from work.  Getting home earlier today meant I had an extra two hours, and with the sun still out, I was super motivated to get outdoors!  I ended up doing a 2.7 run (okay, okay, jog) around my neighborhood and didn’t stop to walk once!! This might not sound like much but it felt huge to me, even though I was jogging along pretty slowly at the end, I kept going! I was a red sweaty mess afterward. Sexy, I know.

I showered, shaved and exfoliated like whoa so I could hit up the tanning salon next door for a spray tan.  I’ve never tried one of these before but I figured with the next few days of beach/pools/bbqs it would be nice to have some color rather than be a white/red splotchy mess. I felt like an idiot doing the “poses” in the Magic Tan booth, but I love the look! I might possibly be hooked…then I swung by Whole Foods to grab the Amy’s burgers that Jess recommended.  My summer meal was made complete with some SP fries, pickles and corn on the cob.

After my late dinner, Julia came home for some serious girl chat time. What would I do without her?! Then of course we had to race to Yogurtland before closing time…yes, it closes at midnight and yes, we needed to get froyo even though it was so late.

Summer Lovin!

Happy almost 4th!!!

Finally, I am BACK in bloggie world! At least for the morning until I return to fun summer vacation land. I am catching up with my posts and your lives…I started to get stressed by my lack of posting and commenting but it seems like a lot of you are going through the same thing! Between work and friends and having FUN, there just aren’t always enough hours in the day.  And besides, if I skimp on enjoying myself to blog, you guys will be treated to many boring, cranky posts and nobody wants that :)

Tuesday morning I finally got my act together with fresh fruits and made a v. satisfying yogurt mess. Perfect summer food!

I ended up getting major props from my bosses in a staff meeting for all the work I’ve been doing the last few days, which is always nice. I’ve been getting hungry early for lunch so right at 12 I nibbled on some veggies.

Then I had another pricey frozen meal…I couldn’t resist this one! I’ve been dying to try the Kashi pesto pasta and I FINALLY found it. I have been looking every time I go into the grocery store and never see it! The promise of a good meal…

…totally worth it!!! This stuff was awesome for just under 300 calories!

I have been less snacky the last few days at work because I’ve been too busy to think about food! I did bring a cinnapple though that I crunched on later in the afternoon.

After work I headed over to see Stephanie’s new place.  She and Josh just moved to a cute neighborhood and a big apartment.  Josh had me do a walk through and give decorating ideas, which of course I loved.  Steph made great salads topped with hummus.  I couldn’t even finish this though because I was stuffed from the gorgeous turkey burgers she made!

After dinner and lots of catching up, Steph and I walked down to Penguins to get some delicious froyo. No skimping on the sprinkles here!!!

Work was more of the busy bee season.  At noon I heated up Progresso Minestrone soup, one of my old school favorites.

I have never been the biggest fan of spicy food, but after having Julia’s firey pork dish the other night, I am loving things HOT! I bought this Tabasco to keep at work and added a little to my soup. Loved it!

My boss gave me props again!  He usually tells us our writing sucks (1. SO supportive and 2. it doesn’t) but he told me this time that I was great at understanding a complex situation and writing under pressure and a huge help putting together the urgent materials we needed this week. That helps make it all worth it :)

Cinnapple made an appearance later in the afternoon.

After work I had a crazy random craving for TJ Pineapple salsa. BEST salsa ever! If you haven’t tried this yet, you must!

For dinner I made a serving of TJ eggplant with a serving of whole wheat pasta on the side. I’ve NEVER seen WW shells before. I get so bored of the rotini and spaghetti and loved eating a new shape :)

After dinner, Miss Master of All Trades colored my hair a gorgeous honey blonde. The roots were getting dark! Actually, someone called me brunette so I just wanted to clear up that little situation. Julia did an AMAZING job!!! We are thinking about adding in some highlights too.  I had half of this TJ beer while she was working away.

Hump day already?! This week is flying by! I am getting so excited for the 4th. I just love when everyone is in the holiday spirit! Okay, rewinding to SUNDAY…I woke up early to more blue skies and made a yogurt mess with one of my strawberry shortcake biscuits. Yum!

I wanted to go to the beach again but was just too burned in a couple spots (bikini line and knees…how do I always miss those places?!) to get more sun so I skipped it and lazed around instead. Lunch was pretty light because I knew I’d be snacking/drinking later at the bbq. I started with some corn on the cob, one of my favorite summer foods (this piece x 2!).

Followed by a bowl of broccoli and chicken!  I made a homemade sauce with some Better N’ PB, soy sauce and chili paste that tasted heavy on the soy and not very peanuty at all. I will definitely have to fool around with that recipe but it tasted good in a pinch.

After lunch, I headed over to the bbq. Three of us swung by a cute little market to grab salt & vinegar chips, corn on the cob, filets, macaroni salad and Coronas. We all dug into the chips and Coronas as soon as we got back.  We chilled on the rooftop patio for a while just sipping our beers and chatting before rousing ourselves for a game of beer pong. Actually, make that two games. Kate W and I dominated and won both!!! After BP I switched over to diet Sunkist and stuck to that for the rest of the night. I haven’t had orange soda in AGES…it definitely reminded me of being a kid :)

Finally, more people started trickling in and we got HUNGRY all at once. We cooked the corn first — it was delicious!! I can’t wait to get some sweet NJ corn though next week when I am home. That’s one cob that can’t be beat!

My piece was awesome!!! I love a good grilled piece of meat, but usually don’t have it unless someone else is cooking it for me, so this was a nice treat. Plus a small scoop of the mac salad on the side. Sorry, no picture! It was around 9PM and we were HANGRY!!!! Kate Cubed did pose for one shot during the grilling though :)

Julia and I got home around midnight and I crashed HARD. So tired! I was still sleepy Monday morning (no big surprise there) but my yogurt mess made me happy as always.

The day was busy, busy, busy! I took a break to grab a frozen meal from Gelson’s. I was craving the tofu rice bowl from Aroma but settled for the Amy’s version.  It wasn’t nearly as good, but still pretty tasty. It held me over for a long time and I would probably buy it again but not too often because of the hefty price tag! Still, it was cheaper than going out for lunch and I knew exactly what I was getting :)

I also snagged a Pink Lady apple while at the grocery store which came in very handy when I stayed an extra 2 hours at the office getting work done and needed to MUNCH!

By the time I got home, I was hungry and tired so I pulled out the last piece of dough from the fridge and made a quick veggie pizza with tomato sauce, cheese, mushrooms, basil, red onion, red pepper, and lots of spicy red pepper flakes. I rolled out the crust SO thin that it stuck to the pizza stone and I had to scrape it off there.  On the plus side, the paper crust made for a ton of slices and I ended up with this plate times 2!!

After pizza can you guess what I did? If you say crawl into bed and pass out, you would be correct!!! Tonight I should have some downtime though so I will catch you up and finally get through my Reader. That thing is both a blessing and a curse, right??

Happy weekend everyone! The sun is finally shining, which makes me SO HAPPY! Friday morning I enjoyed the usual, except with blueberry yogurt since the store was out of my favorite vanilla.

Then I headed outside with The Alchemist and read for a bit in the sunshine. I even treated myself to a chocolate/vanilla swirl froyo with chocolate sprinkles. The place right near my office has a size called “Baby” that’s perfect when you are looking for a just a little taste!

The rest of the day was pretty busy — I even had to stay late! I know, on a Friday, what’s up with that?! I think my long relaxing lunch was definitely worth it though. On the way to the gym, I munched on some cinnapple cubes. I had half before doing some light elliptical for 40 minutes and the rest on the way to the grocery store where I picked up some ingredients for a special dessert :)

Back home, I whipped up some half whole wheat/half white flour dough for pizza! As usual, I used 1/3 to make a thin crust veggie pizza with tomato sauce, cheese, basil, red onion, red pepper, and mushroom. It was delicious, no big surprise!

After some lounging and TV watching, I made dessert! Inspired by the great strawberries I picked up at the Farmer’s Market, I started with some biscuits…

…which turned into strawberry shortcake! Bisquick single packets make these a breeze. You just add water and 10 minutes later you have 150 cal biscuits that are perfect for shortcakes!

Wow, it’s been a crazy two days! Wednesday morning I had the usual yogurt mess, which was delicious as always.

The day was taken up by some PR drama with a cap D! One of our clients got some unexpected uncontrolled unplanned (but not bad!!) coverage on Perez, MTV, Entertainment Tonight…so it was a busy morning. Lunch was a frozen Kashi meal I’ve been wanting to try — Lemongrass Coconut Chicken.  Not going to lie, it was the coconut flakes that caught my eye!

Around 2, I ended up eating some fruit (mango, kiwi, cinnapple) while heading over the hill to help smooth over another sitch and found myself at Kendra’s bachelorette party (yes, from The Girls Next Door). Only in LA, huh?? All the girls were sweet and cute as buttons!

Since I was already in the Valley, I headed over to Kate’s house for dinner. She and her boys had already eaten, so I snagged a few bites of her amazing pasta before eating myself.  Kate gave me a list of every food under the sun and then I got to customize my own meal. And she cooked it for me!! I love cooking, but it’s so amazing to kick back with a glass of wine while someone else makes you a plate of delicious food, right?! Hi guys!  This is Katie Jo.  Tonight dinner was on me because Tates was stressed and needed a girls night.  We opened a bottle of red wine I’d been saving and watched trashy television. On the menu was pasta with tomatoes, bell peppers, garlic, spinach, sun dried tomatoes, and mushrooms all sauteed together.  On the side we had baked chicken in a homemade marinade and a couple slices of fresh kalamata bread.  It was a fun night of cooking and girl talk that we topped off with a quick stop at Pinkberry.

Kate’s boyfriend snapped the photos of my dinner.  Yup, literally didn’t have to do anything for this meal but eat it!

We debated going to Aroma for dessert but I haven’t had the pink in so long! I got an original tart and pomegranate swirl topped with mini chocolate chips, blackberries and blueberries. I couldn’t get a good photo so I finally gave up to eat this goodness :)

I got home and passed out so hard! I woke up this morning still exhausted for whatever reason. My yogurt mess was good but didn’t do much to energize me. Too bad I don’t have any of that caffeine granola!!

All the events from Wednesday carried over and the day was pretty crazy again. I managed to squeeze in a yummy veggie-overload Lean Cuisine ravioli bowl for lunch.

I also was able to swing by the Farmers’ Market to get some fresh veggies.  My fridge is thanking me right now!!  Late afternoon, we celebrated my boss’s birthday with a big cake. I am not the hugest fan of white cake, but I do love icing so I had a few bites. After working late, I went home for an early-ish dinner.  I snacked on a few hummus dipped green beans while cooking.

Afternoon pick-me-up! I was never allowed to have soda as a kid, but my mom always drank Diet Dr Pepper, so this reminds me of her :)

I should have eaten a real snack though because I ended up going to happy hour with one of the girls from work.  A glass of white wine on a pretty empty belly turned into a small flour tortilla, a chicken skewer and WAY too many chips with guacamole. At least we didn’t get a second basket…that’s good, right?

Of course, the whole point of happy hour is ending the night early, which made it feel like I still had time to hit the gym.  I did 30 minutes of intervals on the elliptical before my tummy started reminding me it hadn’t quite digested and said no thanks!  I left to grab some groceries for the rest of the week and came home find the kitten peed in my bed. Again.  So right now I am decompressing with The Office.

Ah Monday! Today I tried the “fake it to make it” trick and it really worked! I left work with a big smile on my face and ready for a fun night. Oh yeah, the other trick to a good Monday — making plans for a relaxing night :)

The day started with an exceptionally good yogurt mess, packed with frozen blueberries, frozen mango, bananas, strawberries and cereal.

We had our regular Monday morning meeting, which is never fun. It does move the day along pretty quickly though. For lunch I had a side salad of broccoli slaw and mushrooms topped with a lil balsamic vinaigrette.

I also had a La Tortilla turkey wrap with Popchips on the side.  The turkey was on its last leg (ick) but it did the trick.  This meal holds me over like WHOA.

After lunch I took a nice little walk to get some fresh air. It might be chillayy but at least that sun is shinin!!  I got snacky around 4 but decided to just save my appetite for dinner. It was a multi-course meal — my favorite kind!  I started with a little bit of Honey Moon.

Followed by 1/2 cup salted edamame, nom nom!

And a TJ veggie eggroll. I love how these are so easy to make AND low-calorie…could it be any better?!

My roomie was inspired by her trip home to make some Hmong cuisine.  Apparently St. Paul has one of the largest (if not THE largest) urban Hmong populations in the WORLD so restaurants there are aplenty.  LA however doesn’t seem to have any Hmong restaurants (if you know otherwise, let me know, Julia will be so happy!) so she decided to whip up some on her own.  And graciously share with me of course! While she was cooking, I nibbled on a few carrots and broccoli florets dipped in spicy chipotle hummus.

Julia’s dish contained lean pork, veggies, garlic, EVOO, lemongrass and lots of spice…jalapenos and chile paste! My mouth was on FIRE. It was amazing :)

Right now we are watching Nurse Jackie and I am contemplating a Skinny Cow to finish off the night. Can you picture it? Probably — here’s a gratuitous shot anyway :)
